How to Grind Your Own Hamburger – Recipe for Perfect Homemade Burgers

When someone says backyard BBQ, your thoughts generally tend to go immediately to big juicy hamburgers fresh off the grill. Sure, you can just grab a pack of frozen patties, or get a little fancier and make your own with that ground beef that’s on the grocery store shelf. However, perfect homemade burgers come from grinding your own hamburger meat. To do that you need a ratio of 75% meat to 25% fat. If you cook your burgers past medium-rare (which many do nowadays) you may want to consider a higher fat ratio. Chuck and sirloin are a great combo of beef and will provide the ideal patty. But the true secret. The thing you need to remember when grinding your own hamburger is to keep everything cold. You want a cold grinder, bowl, and especially meat. 

You have done it. You have grilled your homemade burgers to perfection and are ready to serve. The perfect burger needs to be topped lovingly with cheese, lettuce, all of the good stuff, and then nestled between toasted slices of the best bread ever. I am talking about slices of COBS Bread Garlic Cheddar Sourdough Vienna Loaf. Toasted to perfection on the BBQ, the tangy sourdough flavor will enhance the beautiful beefiness of your perfect hamburgers, adding the notes of cheddar and garlic to the overall ideal burger recipe.

For the Burgers

2.5 lbs.

boneless chuck

0.75 lbs.

sirloin steak

Salt and pepper to taste

Method
  1. The night before you grind, place the grinder attachment, the grinder plates, and the bowls into the freezer. You should be able to fit one of the bowls into the other. 
  2. When you are ready to start making burgers, remove the meat from the fridge and cut it into cubes around 2-inches. Place the meat onto a baking sheet in a single layer, mixing the chuck and sirloin randomly. Freeze the beef cubes for about half an hour before you start to grind. 
  3. Remove the bowls from the freezer. Place some ice and water into the larger of the two bowls. Set up the grinder with the larger of the two plates (leave the one you aren’t using in the freezer for now and place the double-ice-bowl below to catch the meat. 
  4. Run the meat through the grinder once. This texture should be sufficient for your burgers, however, if you prefer a smaller mince, remove the smaller grinder plate from the freezer and run the meat through once more. This texture is ideal for smash-style burgers like our Han-Burgers. Place the meat into the fridge to chill for half an hour before forming patties. 
  5. Form patties with approximately 6 ounces of beef each. Do not overwork the meat or press it together too much – be super gentle if using a burger press – pushing the meat together until it holds its shape but no more. These are a little different than the once made with store-bought ground beef. Place each patty onto a sheet of waxed paper. Once formed, press your thumb into the middle of each patty. Chill the patties once more while you preheat your grill. 
  6. Preheat the grill to 400°F +, preparing to use direct heat. 
  7. When the grill is up to temperature, season the first side of your burgers with salt and pepper to taste. Place the seasoned side down and season the other side of the burgers. 
  8. Sear the burgers for 5 to 7 minutes per side, until cooked to an internal temperature of at least 145°F (med-rare) to 165°F (well). When the burgers are nearly done, butter and grill slices of COBS Bread Garlic Cheddar Sourdough Vienna Loaf until lightly crispy on both sides.
  9. Serve on the grilled Sourdough slices, topped with your favorite condiments and along with your favorite side dishes.
