Brisket Bite Nachos Recipe

Nachos are a fantastic and easy meal or appetizer to make. They can be healthier or heartier depending on what you are looking for. But this recipe for Texas-style Brisket Bite Nachos is one that you won’t soon forget. So, whether it’s a weeknight meal or you’re celebrating the big game, these nachos will surely satisfy.

Creamy Queso

  • 1/3 cup (40 g) American cheese, shredded
  • 1/3 cup (40 g) pepper jack cheese, shredded
  • 1/3 cup (40 g) soft cheese like Havarti or chihuahua
  • ½ cup (118 ml)+ heavy cream (you may need more)
Method
  1. Preheat the barbecue to 400°F (204°C) preparing to use indirect heat to warm the nachos. If your brisket bites are cold from the fridge, place them into some foil with some extra barbecue sauce or into a tray with sauce and warm them while you assemble the nachos. If the bites are already hot because they’re super fresh, just keep them warm.
  2. In a saucepan or cast iron frying pan, add the shredded American, pepper jack, and Havarti with the cream. Set it close to, but not directly over a lit burner while the grill preheats.
  3. Prep any vegetables and toppings you would like to enjoy on your nachos while the barbecue is preheating.  
  4. Remove the creamy queso cheese sauce from the grill and whisk it together. If you were warming the brisket bites, remove them from the barbecue as well. 
  5. In a cast iron frying pan, pizza baking stone, or grilling planks, layer nachos with shredded cheese, creamy queso, hot brisket bites (break them up or leave them whole), and spicy peppers. Top everything with more cheese, queso, brisket bites and finally a squeeze over with your favorite BBQ sauce.
  6. Bake on the barbecue for 5 to 10 minutes, until the shredded cheese has melted and everything is hot. Carefully remove the nachos from the barbecue and top them with any toppings you wish like fresh pico de gallo, sour cream, guacamole, and sliced olives. 
  7. Serve and enjoy
