  • 1½ cups (375 ml) warm water, 110°F (43°C)
  • 2¼ tsp. regular yeast
  • 3¼ cup (406 g) all-purpose flour
  • 1 tsp. salt
  • 2 cups (226 g) shredded cheese
  • 2 tsp. onion powder
  • 1 tbsp. chopped fresh chives
  • 1 tbsp. Oil
Method
  1. In a large bowl, combine the yeast and the warm water. Then, dump in the flour, salt, garlic, onion, and some of the chives. Mix until a shaggy ball comes together.
  2. Add half to three-quarters of the cheese to the dough ball and use your hands to mix it in.
  3. Remove the dough ball to the counter for a moment, and grease the bowl with some oil. Put the dough back into the bowl, cover it with a tea towel, then place it into the oven with just the oven light on.
  4. Proof the bread in the oven with just the light on for an hour and a half to two hours - until it's doubled in size. During the last half hour, light your barbecue using all burners and place a Dutch oven onto the cooking grids to warm. Preheat to 450°F (232°C).
  5. Turn the dough out onto a piece of parchment and top it with the remaining cheese and chives. Carefully remove the lid of the Dutch oven and place the parchment and dough into the Dutch oven, replace the lid. Turn the burners below the Dutch oven down slightly.
  6. Bake the bread with the lid on for 25 minutes, then remove the lid and bake a further 10 minutes, until the cheese on top is crisp and golden.
  7. Remove the bread from the Dutch oven and allow it to cool before slicing and serving.
