  • 2 tbsp. oil
  • 6 chicken thighs or breasts, boneless or bone in skin on
  • ¼ cup (50 g) Cajun seasoning
  • 1 small onion, chopped
  • 1 green bell pepper, chopped
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 1 cup (195 g) long-grain white rice
  • 1 tbsp. cajun seasoning
  • 2 tbsp. butter
  • 1¾ cups (437.5 ml) chicken broth
  • Salt and freshly ground pepper to taste
  • Sliced limes for garnish
Method

You do not have to use the PRO Chicken Infusion Roaster for this recipe, a Ceramic Casserole, the Grill Roasting Pan, or even the Cast Iron Frying Pan for this recipe.

  1. Season the chicken thoroughly on both sides and set aside while you preheat the grill, prepare the vegetables, and measure out the ingredients.
  2. Preheat your grill lighting all of your burners to medium-high. Place a cast iron frying pan or the bottom of the PRO Chicken Infusion Roaster to preheat.
  3. Oil the warmed pan and sear the chicken on both sides until golden. Remove the chicken to the warming rack or a bowl and add more oil if needed. Cook the vegetables until the onion is translucent. Turn the burners to medium-low.
  4. Once the vegetables have cooked down, add the garlic, cooking until fragrant, about 30 seconds to a minute. Add the Cajun seasoning, butter, and rice, then toast the rice for a little. Pour over the chicken stock and add the chicken back into the pan along with any juices. Top with some sliced limes. Bring the mixture to a simmer and cover with a lid or foil, cooking for about 20 minutes.
  5. When all of the liquid has cooked off, everything should be cooked through. Check the rice for doneness and add more stock if needed, continuing to cook for an additional 5 to 10 minutes.
  6. Remove from the heat and serve, family style, with your favorite Cajun-style side dishes like fried or steamed okra.
  7. Pair this with a resiling, the crisp fruit and floral aromas will match beautifully with the fragrant and flavorful spices of this meal. For beer pairings, a light or blonde ale will accompany this meal well.
