
Easy, One Pan, Grilled Tarragon Chicken Recipe

- 4 chicken breasts or 8 thighs
- Salt and pepper or chicken seasoning to taste
- 2 tbsp. oil
- 1 onion, diced
- 3 cloves garlic, minced
- 2 tbsp. flour
- 1 tbsp. mustard
- 2 cups (500 ml) chicken stock, hot
- ½ cup (125 ml) sour cream
- 1 to 2 tbsp. chopped fresh tarragon
Broccoli or fresh seasonal vegetables and potatoes for serving
- Season the chicken to taste with your favorite seasonings, or just salt, pepper, and garlic.
- Place the Napoleon Grill Roasting Pan onto the grill, you can also use the Cast Iron Frying Pan. Then, preheat the grill, lighting all burners, setting two to high, and the ones under the pan to medium-low.
- Sear the chicken until grill marks form. While the chicken is cooking, add the oil and fry the onion, add the garlic when the onion is translucent. Once the garlic is fragrant, add the mustard and then flour to the pan and combine.
- Stir in most of the stock, reserving a little to stir into the sour cream. Then add the stock and sour cream mixture to the drop-in roasting pan. Allow the liquid to come to a simmer and add the chicken.
- Finish the chicken in the simmering sauce mixture, until it reaches an internal temperature of 165°F (74°C). While the chicken is finishing, you can use the hot side of the grill to cook some of your favorite seasonal sides.
- Once the chicken is up to temperature, remove and rest. Serve the saucy chicken over potatoes, with your favorite seasonal sides. For wine pairings, try an Off-Dry Reisling or Chenin Blanc. If you would prefer some beer, a Belgian-style Tripel will pair beautifully.
