Green Tea and Grilled Lime Mojito Recipe

Ingredients
  • 8+ fresh mint leaves
  • 1 lime, halved
  • ½ oz. (15 ml) green tea simple syrup
  • 1 cup (250 g) ice cubes, or as needed
  • 2 oz. (59 ml) white rum
  • club soda, as needed

Green Tea Simple Syrup

  • 1 cup (200 g) sugar
  • 1 cup (250 ml) water
  • 2 tbsp. quality green tea, sub 2 bags
  • 1 slice ginger
Method
  1. If you don’t already have some, make the simple syrup. Use your preferred green tea, whether it is loose or in bags. Bring the water and sugar to a simmer in a saucepan over low heat. Once simmering, add tea bags or place leaves into an infuser and steep the tea and ginger.
  2. Once the liquid begins to thicken, remove the saucepan from the heat and continue steeping for another 10 minutes or so. The resulting sweet liquid is herbaceous with a little bite.
  3. Allow the liquid to cool and place into a jar or squeeze bottle.  

Green Tea and Grilled Lime Mojitos

  1. Preheat the grill to high and grill the lime, cut face down, until it has grill marks. Remove from heat and allow to cool a little. Slice the lime into wedges. 
  2. In a shaker, add the mint leaves and a couple of slices of grilled lime. Muddle these before adding the rum, the green tea syrup, and ice. Shake well. 
  3. Strain the mixture over ice in a cup. Top up the glass with club soda. Garnish with more mint and lime.
