- 1 cup (120 g) all-purpose flour
- 2 tbsp. sugar
- 2 tbsp. baking powder
- 1 tsp. cinnamon powder
- ½ tsp. salt
- ¾ cup (188 ml) milk
- 1 egg
- 1 tsp. vanilla
- 2 tbsp. butter, melted
- 1 lemon juiced and zested
- 1 cup (190 g) frozen blueberries
- Butter for cooking pancakes
- Butter, syrup, and fresh blueberries for serving
- Preheat the Griddle to medium.
- Whisk together the dry ingredients, the flour, sugar, baking powder, and salt.
- In a separate bowl, combine the egg, vanilla, melted butter, lemon zest, and 2 tbsp. lemon juice.
- Combine the wet and dry ingredients and add the blueberries, stirring until just combined. There will be some lumps, this is good. Overmixing will lead to tough and chewy pancakes due to gluten development.
- Add butter to the hot griddle and once it is foaming, drop ¼ cup (63 ml) scoops of batter onto the griddle.
- Allow the pancakes to cook for 3 to 5 minutes, until little bubbles form on the uncooked side. If they are getting too dark before the bubbles form, reduce the heat. Flip the pancakes and continue cooking until golden on the other side.
- Move the cooked lemon and blueberry pancakes to a cooler section and use the remaining pancake batter, repeating step 6.
- Serve these pancakes hot with your favorite toppings. Try throwing some extra blueberries into a saucepan for a quick jam, or go traditional with butter and syrup.
