Recipe for Grilled Short Rib Steaks with Garlic Oil

Hard to get and an underrated cut, the short rib steak is a delightful and well-marbled cut of beef that takes salt and heat very well. This cut is often attached to bone and braised instead of seared and served as steak. In this recipe, we’re grilling our short rib steaks and serving them with a light garlic oil filled with crispy garlic and scallion chips.

  • 2 to 4 short rib steaks
  • 6 cloves garlic, sliced thin
  • 4 scallions, sliced thin
  • 1/3 cup (79 ml) extra virgin olive oil
  • Salt to taste
  • Balsamic glaze to taste
Method
  1. If the beef short ribs have the bone still attached, you will need to carefully remove them. Trim any excess fat and then pat the meat dry before seasoning it well with kosher salt. Let the beef sit for at least 45 minutes before patting them dry again. 
  2. While the short ribs are seasoning, make the garlic oil. Slice the garlic and the white part of the scallions thin. Place them into a small skillet with the oil. Slowly and gently bring the oil up to a medium-low heat until the garlic and scallion begin to fry. Continuously shake the pan (carefully) until the garlic becomes a light golden brown. Remove the oil, garlic and scallions to a bowl and allow it to cool while you work on the steak. 
  3. Preheat two burners on your barbecue to high and wait for the grill to reach about 450°F. 
  4. Place the steaks over the lit burners and sear them for about 1 minute before moving them 45° and searing another minute or two. This will provide perfect grill marks. Flip the steaks and repeat on all sides. 
  5. The short rib steaks are done at a temperature of around 120°F to 125°F. If they aren’t quite there yet, move them off of direct heat over the burners that are not on to finish cooking. 
  6. Once they reach the desired temperature, remove the short rib steaks and allow them to rest for about 15 minutes. 
  7. Slice the rested meat against the grain and serve on top of some mashed potatoes and with your favorite seasonal greens. Dress the steaks and potato with the garlic oil and drizzle with a little balsamic glaze for that hint of acid. Garnish with a little extra salt.
