Recipe for Sopressata Wrapped Brie in a Bread Bowl

Cheese is a magical creation that pairs well with many things. Wine, beer, fruit, and especially barbecue. Celebrate National Cheese Day on June 4th, by making a delicious meal with cheese on your grill. This recipe for Sopressata Wrapped Brie is the perfect appetizer or game night snack, or it can make a meal for two(ish). Grab chunks of bread right off the loaf and dip them. You can also serve this with your favorite fruits, extra chips, crackers, and sliced vegetables.

  • 1 wheel of brie
  • 1 sourdough bread boule/cob
  • 8 to 10 thin slices Sopressata
  • 1/3 cup (76 g) butter, melted
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • Crackers and fruit for serving
Method
  1. Preheat your barbecue to 350°F (180°C), preparing to use the indirect grilling method. Consider preheating a pizza stone on the grill at this time as well. 
  2. Slice the top of your bread using a serrated knife. Then, using the brie as a guide, carefully cut out a round hole for the brie, removing bread from where the brie should sit. Reserve this bread for dipping or turn into croutons for your next salad. 
  3. Layer sliced Sopressata along the bottom and up the sides of the cavity you created for your brie. Carefully cut most of the way through the bread and meat, in a cross-hatch pattern, leaving a little bit so that it stays together. 
  4. In a small bowl, melt the butter, stir in garlic, and season with salt and pepper. Dribble, brush, or pour the melted butter between the slices in the bread. If there’s any left over, drizzle it over the extra bread you made earlier. 
  5. Slice off the top rind of the brie and then gently lower it into the cavity you created. Place the top back on the bread, covering the brie. You may want to wrap it in foil to ensure everything melts. 
  6. Bake the brie bread bowl for about 15 to 20 minutes, until everything is crisp on the outside and melty on the inside. 
  7. Serve warm with extra crackers and your favorite seasonal fruits for a delicious appetizer, snack, or meal for two.
