- 1 lb (0.5 kg) scallops
- 1 lb (0.5 kg) shrimp, peeled and deveined
- Garlic and herb seasoning or salt to taste
- 3 tbsp. high-temp oil
- 1 lemon
- 2 tbsp. butter
- Rice for serving
Dijon Vinaigrette
- ½ cup (250 ml) extra virgin olive oil
- 1½ tbsp. Dijon mustard
- 2 tbsp. white wine vinegar
- 2 tbsp. freshly squeezed lemon juice + zest
- ½ tbsp. chopped fresh dill
- In a bowl or using a blender, combine the oil, mustard, vinegar, lemon juice, and zest, as well as the dill. Whisk or blend until emulsified.
- Preheat your Napoleon griddle to medium-high, about 375°F (191°C).
- Dry the seafood well on paper towel before you season the shrimp and scallops with salt, or the garlic and herb seasoning.
- Oil the section of the griddle you will be using. Allow the oil to heat until it begins to shimmer, then set the scallops down on their flat face. Add the shrimp. Cook both for about 3 minutes, then flip, cooking an additional 3 minutes.
- Once you flip the scallops, add a pat of butter or two around the cooking shrimp and scallops, then squeeze over some lemon. After 3 minutes, remove both from the heat.
- Serve the shrimp and scallops on a bed of rice. Drizzle with the Dijon vinaigrette and additional lemon wedges.
- Pair this with an acidic Falanghina or a light chardonnay. For a beer pairing, consider a whitbier or a lager.
