Buttery Grilled Snapper Recipe

I needed a whitefish for a lunch recipe at work. Yep. I grill, at work, on the job, feeding the people in the office. That is what I do, when I'm not typing. I have the best job.

Okay I digress. Needed fish. Needed something different. So, pacing in front of the seafood counter in the local supermarket, I asked for a reasonably priced fish that I could get a lot of right then and there. The kind person who helped me suggested the Rockfish. Yep. Still new to the seafood world I goggled at her. What's a rockfish? It doesn't sound that great. Maybe a little hard. (ba dum) You may know it as Black Snapper. And this is how you grill it up quickly for a fantastic meal.

8 fillets 

black snapper or rockfish

1/4 cup 

butter, melted

1 tbsp. 

garlic herb spice mix like Mrs. Dash

1 tsp. 

lemon pepper

1 tsp. 

parsley

 

Grilled Vegetable Salad

1 tbsp.

oil

salt and pepper to taste

1 bunch

asparagus

1

red pepper

1

green pepper

red onion

1 bunch

broccoli

1/3 cup 

René's Mighty Caesar dressing

1/4 cup 

parmesan cheese

Method
  1. Oil the grids and preheat the grill to 400°F.
  2. Place a PRO Stainless Steel Topper over direct heat. Toss the veggies with the oil, salt and pepper and place them into the PRO Topper to grill, mixing frequently. If they are getting charred but not cooking through, turn the heat down a little.
  3. When the veggies are tender to your liking, toss them with the René's and parmesan cheese. Keep warm.
  4. Before melting the butter, add the herbs to the butter, then melt it. That way when it's melting, the herbs infuse with the butter. Flavor bonus!
  5. Brush the fillets of fish with the butter-herb mixture and grill them over direct heat, basting and turning the fish. Grill for 3 minutes per side, or until the fish is firm and slightly flakey. Careful not to overcook it.
  6. Serve with the veggie salad and some fresh bread with butter.

So this ended up being quite delicious. The smoky taste of the grill and the buttery, well butter, brought this fish dish together. Black Snapper/ Rockfish, is a lightly fishy flavored fish. Not crazy like tuna tends to be. This is a good fish to try if you're unsure. What was your first fish to try? Leave a comment below and tell us about your first time eating fish.
