Freshly grated zest lemon
of garlic, finely chopped

A few fresh coriander leaves
- Combine the lamb mince and all the other ingredients in a bowl and mix thoroughly. Put the meat onto thick, flat, long metal skewers and press until the skewers are covered to around 20cm in length and 2.5cm in width.
- Place pizzastone on grill. Remove all shelves from the barbecue and heat to 230-250oc. Place the naans on the pizza stone (2 at a time) and grill 5 minutes on each side.
- Place the skewers on the grilling grids and grill for 3-4 minutes. Rotate the skewers after 2 minutes and ensure both sides are evenly grilled.
- Remove the koftas from the skewers and serve in between two halves of naan bread with the caramelised red onion and some fresh coriander.
