Big Game Bacon Lollipop Recipe

  • 5 lb. (2.25 kg) skinless pork belly
  • ¾ cup (177 ml) Beer
  • 1/3 cup (79 ml) maple syrup
  • 1 cup (250 ml) BBQ sauce
  • ¼ cup (28 g) Rib seasoning
  • 3 tbsp. (38 g) Brown sugar
Method
  1. In a bowl, combine the rib seasoning and brown sugar. Cut the pork belly into 2-inch (5 cm) cubes and thread them onto small skewers. 
  2. Set up your barbecue for smoking by adding a smoker box, pipe, or some wood chips in foil over the burner you will be lighting. Preheat your barbecue to about 275°F (135°C).
  3. Smoke the pork-pops for up to 2 hours, until an internal temperature of 165°F (74°C) is reached. Remove the bacon lollipops from the grill and place them into a heat-safe dish, like the Napoleon Ceramic Casserole Dish or the Napoleon Drop-In Grill Roasting Pan.
  4. Pour over your beer, maple syrup and BBQ sauce, then cover and return the lollipops to the barbecue for another 1½ hours or until a temperature of 210°F (99°C). 
  5. Heat the main burners of your barbecue to medium high and remove the pork pops from the heat-safe dish to sear until caramelized and crispy. 
  6. Serve this to your friends and family, topped with crispy fried onion, on your next game night or at your next tailgate and break free of the wing and chip rut.
