Coffee Rubbed Wagyu Ribeye Recipe

There is no better way to celebrate National Coffee Day than by making an amazing Coffee Rubbed Wagyu Ribeye. This recipe takes the massively flavorful and succulent American Wagyu Ribeye from The Meatery and pairs it with a deep and delightful coffee rub which adds a whole new dimension to an already incredible steak.

Coffee Rub

  • 2 tbsp. (10 g) ground coffee, beans that have been freshly ground, not instant
  • 2 tsp. (8 g) brown sugar
  • 1 tbsp. (7 g) paprika
  • 1 tbsp. (17 g) salt
  • 1 tsp. (2 g) black pepper
  • ½ tsp. (1 g) onion powder
  • ½ tsp. (1 g) garlic powder
Method
  1. Preheat the barbecue to 300°F (149°C) preparing to use the indirect grilling method. You can use the warming rack or place the steak between lit burners, away from direct heat. 
  2. Prepare the rub by combining the Coffee Steak Rub. If you don’t have pre-ground beans and have whole, use your coffee grinder to grind the beans before mixing. If you have a spice grinder, mix everything together while grinding the beans by adding all the rub ingredients into the grinder. *(Not recommended if you have a coffee grinder that is used ONLY for coffee.)
  3. When the grill is hot, season the American Wagyu Ribeyes with the coffee rub before placing it onto the barbecue. The cook can take anywhere from 30 to 60 minutes depending on the temperature outside and the steak thickness. For the perfect finished steak, cook it to about 10°F less than your ideal internal temperature – for wagyu, that is about 120°F (49°C) - rare. Use a wireless digital meat thermometer or an instant-read thermometer to monitor the steak’s internal temperature. 
  4. Remove your steak from the barbecue and allow it to rest when it reaches the desired temperature. It will rest while you preheat your infrared sear station or main grill to high. 
  5. Once up to temperature, sear your steak over direct, high heat, until sear marks have formed. Perfect sear marks usually form within about 1 to 2 minutes on each side of the steak. 
  6. Don’t forget to serve this steak with a coffee, chocolate or cherry forward red wine like a cabernet, and your favorite seasonal side dishes.
