Cubanos Sandwich Recipe

Typically served with rice, beans and fried plantains, Cuban-Style Mojo Pork is the integral ingredient in this delightful, delectable and downright delicious Cuban Sandwich. This recipe for Cubanos (as they are often referred) takes the leftover pork from our Mojo recipe and places it within the loving embrace of bread that has been toasted and topped with ham, pickles and swiss cheese, then pressed on a hot griddle into a sandwich that is crisp, tender and most of all, amazing to eat.

  • 2 6-inch (15.25 cm) lengths of bread preferably Cuban bread, but a soft exterior baguette will do

  • ¼ cup (59 ml/57 g) butter, melted

  • 2 tbsp. (30 ml/31 g) prepared Dijon mustard

  • 6 slices of sweet ham (honey or black forest)

  • 1 solid handful – >1 cup (60 to 70 g) leftover Cuban-Style Mojo Pork

  • 4 to 6 slices deli-style swiss cheese

  • Dill pickles, sliced lengthwise

Method
  1. Replace the cooking grids on the barbecue with a Napoleon cast iron griddle or place it directly onto the cooking grids. Place a Napoleon sandwich press or cast iron frying pan on the grill to preheat as well. Light the barbecue and preheat to around 400°F with burners lit to about medium under the griddle.
  2. While the grill is preheating, gather the ingredients. 
  3.  Fry off the ham and pork, getting them nice and hot and caramelizing the outsides a little. While that is happening, brush the inside of the bread that you are using with butter and toast it to golden perfection. 
  4. Spread the bottom slice with mustard, top with sliced ham and pork, followed by the pickles, and then topped with the cheese. Add the top slice. 
  5. Throw butter down on your griddle and brush the top of your Cubano with more melted butter. Using heat-resistant gloves, place the preheated cast iron on top of the sandwich and press. 
  6. Remove once the bread is golden-crisp and the cheese is melted. If the cast iron press or pan is not hot enough, you may have to flip the sandwich. 
  7. Serve with French fries or chips
