Korean Style Steak Sandwich Recipe with Garlic Mayo

There is nothing better than a big sandwich stuffed to the brim with delicious fillings and your favorite toppings. These Korean Style Steak Sandwiches combine a succulent marinated steak, kissed by flames until perfectly cooked. The steak is sliced and layered between slices of toasted bread and topped with grilled peppers, cheese, and savory garlic mayonnaise. It isn’t hard to wrap your head around these delicious flavors, but it will be hard to wrap your hands around it when it’s stacked so high with tasty fillings.

Korean Style Steak Sandwich Recipe with Garlic Mayo

  • 1 lb. (0.5 kg) skirt or flank steak
  • 1 sweet red apple, grated
  • ½ yellow onion, grated
  • 3 cloves garlic, grated
  • ½-inch (1.2 cm) knob ginger, grated
  • ½ cup (118 ml) soy sauce
  • 2 tbsp. (12.5 g) brown sugar
  • 2 tbsp. (30 ml) sesame oil
  • 1 tbsp. (15 ml) gochujang (Korean red pepper paste)

Garlic Mayo:

  • 4 tbsp. (59 ml) mayonnaise
  • 2 cloves garlic, turned into paste *see directions
  • ¼ tsp. (0.6 g) salt
  • Small squeeze lemon juice

Sandwich:

  • 8 slices, your favorite bread
  • 4 to 8 slices cheese
  • Butter to taste
  • 1 red pepper, sliced
  • 1 green pepper sliced
  • 1 red onion sliced
  • 2 tsp. (10 ml) sesame oil
Method
  1. In a nonreactive bowl or casserole, prepare the marinade by stirring all of the marinade ingredients together. Lay the steak (skirt or flank) in the marinade, ensuring it is fully coated and then set in the refrigerator to marinate for at least an hour, up to 8 hours. 
  2. While the meat is marinating it’s time to make the garlic mayo. Turn the garlic into paste by removing the root end and then roughly mincing the garlic. Once broken down into small chunks, sprinkle with kosher salt and then press the garlic with the side of your knife, working it back and forth until the garlic breaks down. Do this towards the edge of the cutting board to give you leverage and allow room for the knife handle. Whisk the garlic into the mayonnaise and add the lemon juice, adding more to taste at your preference.
  3. Slice the peppers and onion into thin slices and drizzle with sesame oil. 
  4. Replace your cooking grids with a cast iron griddle. Preheat your barbecue to high, lighting the burners without the griddle to medium-high and the ones under the griddle to low. You can also put the cast iron sandwich press on the barbecue to preheat as well. 
  5. Toss the vegetables onto the heated griddle to cook. Remove the steak from the marinade and sear it over the hot side of the barbecue until grill marks form. Flip the skirt steak once and continue cooking so that the other side gets sear marks too. Then, turn off the heat. Allow the steak to continue cooking until it reaches between 120°F and 130°F (49°C and 54°C). Remove the steaks from the grill to rest. 
  6. While the steak is resting, finish cooking the vegetables and then remove them from the barbecue. 
  7. Now it’s time to assemble the sandwiches. Slice the steak thinly against the grain. Butter the outside of the bread or buns you are using. Spread the garlic mayo on the inside of one of the slices of bread. Top with cheese. Top with the sliced steak and ensure that the grilled vegetables are on the side with the cheese. 
  8. Place the sandwiches onto the griddle and press with the sandwich press or a preheated cast iron skillet to toast both sides of the sandwich until the butter has gone crispy. Serve with your favorite side dishes, like chips or salad.
