  • 24 oz (680 g) Beef steak* sliced ¼-inch (0.6 cm) thick
  • 15 Slices Provolone cheese
  • 2 Green peppers sliced
  • 1 to 2 White onions sliced
  • 7 oz (200g) Prosciutto
  • ½ cup (120 g) Garlic butter
  • Aioli for serving
  • Fries for serving

*Sirloin, flank, or bottom round

Method
  1. Line a sheet tray of parchment or foil. Layer the steak so that it covers the bottom of the tray, then layer the provolone, prosciutto, and finally another layer of steak.
  2. Place another layer of foil or parchment, followed by another sheet pan of the same size. Weigh that down with something heavy like a couple of books or cast iron pans. Place this into the fridge for at least an hour, up to two hours.
  3. Once slightly frozen, remove the steak layers from the freezer and slice them into equal-sized squares. Skewer the squares and season well with your favorite BBQ rub, steak spice, or just salt, pepper, and garlic.
  4. Preheat your grill to 350°F (177°C), preparing to use a combination of direct and indirect heat.
    Slowly cook the skewers, until an internal temperature of about 120°F (49°C). Then, sear over direct heat, basting with garlic butter, until you have some excellent grill marks. Remove them from the grill and rest. While the meat is cooking, toss the sliced onion and peppers into a grill wok and cook until slightly charred.
  5. Serve with your favorite sides, like chips or fries, and don’t forget to have a delicious aioli on the side for dipping.
  6. Pair this with a Merlot or Syrah, looking for full-bodied reds that feature dark fruits. If you prefer to pair it with beer, try an IPA that features strong malts and hops together.
