How to Grill the Best Steaks

Grilling the best steak ever doesn’t have to be hard. This easy barbecue recipe will show you how to grill the best steaks the next time you fire up your ‘Que. Simple flavors, easy techniques and a little patience will make you a master. So, when the steaks have never been higher, you can walk to your barbecue with confidence and walk away with the best grilled steak you’ve ever had. 

This recipe only calls for one steak, but this recipe is also very repeatable. Follow the instructions for as many steaks as you need for your group.

  • 1 steak, at least 1-inch or thicker
  • Kosher salt
  • Black pepper
  • Dehydrated garlic (optional)
Method
  1. Ask your butcher (even in a grocery store) to custom cut your favorite steak cut to at least 1-inch or thicker. This technique works well for most steak cuts, so pick your favorite. You will want to look for meat that has good marbling – streaks of creamy-white fat – throughout the meat. 
  2. Season the steak well with kosher salt at least 45 minutes before you are planning to cook. Place the steak onto a wire rack over a baking sheet if at all possible. This will help the salt absorb better. 
  3. Preheat the barbecue to 500°F (260°C) with two of the burners, while leaving the other two off. 
  4. While the barbecue is preheating, pat the steak dry with paper towel, then season it with pepper and (optionally) dehydrated garlic to taste. 
  5. Sear the steak on one side for at least 60 seconds. Turn the steak 45° and sear again for 60 seconds to get those great hatch-marks. Flip the steak and repeat. 
  6. Sear the sides and edges of the steak before moving it to the “off” side of the barbecue to finish. Check it with a meat thermometer and then close the lid of the barbecue if it needs to cook a little further. Anywhere between 1 and 10 minutes depending on your desired temperature and thickness of the meat. 
    *Remember that the temperature can rise between 5 and 15° while resting.
  7. When the desired temperature is reached, remove the steak from the barbecue and allow it to rest on a cutting board for at least 10 minutes before serving with your favorite sides like salad, potatoes and vegetables.

Types of Steak

  • Strip (NY Strip) – Great value for the money, can easily find a well-marbled cut for a reasonable price. 
  • Round – Not ideal for a good steak dinner, this inexpensive cut is very lean and gets tough if improperly cooked.
  • Flank – Great for fajitas, quesadillas, and marinating. This is an inexpensive cut that can feed many but can get tough when not cooked properly.
  • Rib Eye – Great flavor and marbling, always cooks up nice. May, or may not, have a bone. Tends to be pricier
  • Tomahawk – Investment steak. It’s a very thick rib eye with an exceedingly large bone. Can feed up to 4 people. One steak can cost up to $60.
  • Tenderloin – A very forgiving cut for beginners. Low in flavor so, season well. On the pricier side for the amount of meat you get. 
  • TBone/Porterhouse – Big and beautiful, characterized by the t-shaped bone. Features the Strip and some tenderloin. Challenge to grill with two different kinds of steak in one cut. Tends to be expensive.
