lamb mince

1/2

Freshly grated zest lemon

1 clove

of garlic, finely chopped

2 tbsp

fresh mint leaves

2 tbsp

fresh coriander leaves

1 tsp

hot paprika powder

1 tbsp

ras el hanout

2 tsp

coarse sea salt

6 plain

naan breads

1

caramelised red onion

A few fresh coriander leaves

Método
  1. Combine the lamb mince and all the other ingredients in a bowl and mix thoroughly. Put the meat onto thick, flat, long metal skewers and press until the skewers are covered to around 20cm in length and 2.5cm in width. 
  2. Place pizzastone on grill. Remove all shelves from the barbecue and heat to 230-250oc. Place the naans on the pizza stone (2 at a time) and grill 5 minutes on each side. 
  3. Place the skewers on the grilling grids and grill for 3-4 minutes. Rotate the skewers after 2 minutes and ensure both sides are evenly grilled. 
  4. Remove the koftas from the skewers and serve in between two halves of naan bread with the caramelised red onion and some fresh coriander.
