The Best BBQ Beef Stroganoff Recipe

I think that nearly everyone has childhood memories of a weeknight meal. Trying to remake it has probably left you with something to be desired, however, fear not. This is the Best BBQ Beef Stroganoff Recipe and you will find yourself thrilled with these delicious results. While I use the Napoleon Drop In Roasting Pan in this recipe, a large cast iron frying pan, or other roasting pan set atop the cooking grids will work just as well for this recipe.

garlic, minced/grated

beef broth

1 tbsp.

Worcestershire sauce

1 tbsp.

Dijon mustard

¾ cup

sour cream

3 cups

egg noodles, cooked al dente

  1. Wash and slice the mushrooms, slice the onions. Season the beef with salt, garlic powder, paprika, and freshly ground pepper. 
  2. Remove one set of cooking grids and place the Drop-In Roasting Pan into the grill. *Optional, add some soaked wood chips to a smoker box or tube and place that onto the sear plates before setting in the roasting pan.
  3. Preheat the main burners on the barbecue to high and light the side burner, preheating that to medium-low. 
  4. Add 2 tbsp. of butter to the Drop-In Roasting Pan and sear the stewing beef until deeply browned on all sides. Turn the burners to low and allow the beef to slow roast (and smoke if you added a smoker box) while you prepare the onions and mushrooms. 
  5. Add 2 tbsp. butter to the Stainless Steel Wok over the side burner and brown the mushrooms until they are nicely cooked. Remove and set aside. 
  6. Add the final 2 tbsp. of butter to the wok and cook the onions until they are soft and translucent, beginning to caramelize or brown. When they are nearly done, add the garlic. 
  7. Open up the grill and move the stewing beef from the Drop-In Roasting Pan. Deglaze the roasting pan with a couple of splashes of beef broth. You want to scrape up those little flavorful bits. Add the remaining broth, the Dijon, and the Worcestershire to the pan. Bring the broth mixture up to a simmer, you may need to increase the temperature of the burner below the pan. Once nearly simmering, carefully remove some of the liquid to a heat-safe dish before adding the beef, mushrooms, and onions. 
  8. While the beef mixture is simmering, close the lid. Add the broth you removed to your sour cream, whisking it in a little at a time to ensure that the sour cream does not break (go chunky) when you finally add it to the sauce. This is called tempering. Once you have finished adding the hot broth to the sour cream, stir it into the simmering beef on the grill. 
  9. Serve piping hot over the egg noodles.
