Ingredients

Flank steak

3 cups

whole grain rice, cooked

4 tbsp.

sesame oil, divided

4 heads

Bak choi, washed

2

carrots

2

zucchinis

1

large sweet potato cubed

salt and pepper to taste

½

red onion, sliced thin

1 tbsp.

rice wine vinegar

toasted sesame seeds

green onion

MARINADE

3 tbsp.

garlic, grated or crushed

2 tbsp.

ginger grated

2 tbsp.

sesame oil

½ cup

soy

¼ cup

honey

1 tbsp.

sambal olek (or more to taste if you like it hot)

Method
  1. For the Marinade:
Make a paste with the ginger and garlic, grating or grinding will do this easily. Add the sesame oil, soy, honey and sambal olek to taste. Place the steak into a nonreactive dish and pour the marinade over. Refrigerate for up to 8 hours.
  2. Slice the onion thin, toss with the rice wine vinegar and set aside until serving.
  3. Preheat the grill to 500°F. Place the Napoleon grill topper to preheat too.
  4. Start with the sweet potato, peel and cut the sweet potato into bite-sized chunks. Season with 1 tbsp. of sesame oil, salt and pepper to taste. Wrap in foil and place onto the preheating grill on the warming rack.
  5. Once the sweet potato is on the grill, wash and peel the carrot, then slice the carrot and zucchini into matchstick sized chunks. Season with 1 tbsp. of sesame oil, salt and pepper to taste. Slice the bok choi in half and drizzle with the remaining sesame oil.
  6. Grill steak over direct heat for 4 to 5 min per side, allow to rest for 10 minutes under foil. Grill the carrots and zucchini in a grill topper and the bak choi directly on the grill for about 10 to 15 minutes or until tender-crisp.
  7. Once completely rested, slice the meat against the grain as thin as you can. Assemble these bowls beginning with about 1 cup of rice, 2 to 3 slices of meat, and loads of veggies. Garnish with red onion,  green onion, and toasted sesame seeds, and maybe some Sriracha.
