Recipe for Baking Scones on the BBQ

After enjoying the amazing Scones from COBS Bread I sort-of became obsessed. When the call went out at the office that we were having a potluck breakfast, I KNEW what I had to do! Scones! Scones with fresh, homemade Jam! Now the weather outside, when I needed to bake these fresh scones was a whopping 46°F (around 115°F) so there was no way I was going to bake indoors, our poor air conditioner was working hard enough. So I decided on baking these Scones on the BBQ.

5 cups

all-purpose flour

2 tbsp.

baking powder

2 tsp. 

cinnamon

1 tsp. 

salt

1⁄3 to ½ cup

sugar (depending on desired sweetness)

1 cup 

cold butter, cut into cubes

1 1⁄3 cup

milk

1 cup

chocolate chips or raisins (optional)

Method
  1. Preheat the grill to 425°F, preparing to use the indirect grilling method. Remember to place a Napoleon Cast Iron Griddle or a Napoleon Baking Stone onto the grill to preheat as well.
  2. In a large bowl, sift together all of the dry ingredients. Use a pastry knife to cut in the cold butter chunks until the flour resembles sand with a few chunks in it. Stir in the milk with a wooden spoon, until a shaggy dough ball comes together (mostly). Kneed the dough a little in the bowl, then remove 1/3 of the dough and kneed it a little more on a floured surface – only 3 or 4 turns are needed. **At this point chocolate chips, sliced apples, raisins, craisins, or any other tasty morsel can be “accidentally dropped” into the dough and mixed in. I won’t tell anyone.
  3. Using your hands or a rolling pin, shape the dough into a flat square-ish shape and cut into quarters. Then cut those quarters diagonally to make that scone-like shape. Repeat with the rest of the dough.
  4. Place the cut dough onto a lined cookie sheet, or if using the Napoleon Baking Stone, place a sheet of parchment or a baking mat directly onto the baking stone.
  5. Bake the scones for 10 to 15 minutes, or until they are just starting to become golden.
  6. Remove from the grill and allow the scones to cool before serving with tea, clotted cream and homemade jam.

This recipe makes enough scones for a crowd. I was baking for 20-ish, and when all was said and done I have 24 medium-small scones, so I am pretty happy. Baking Scones on the BBQ is easy, and won’t heat up the house by using the oven. The recipe comes together quickly too! What is your favorite thing to bake on your BBQ?
