The King in the North Roast Recipe - A song of BBQ and Bison

Slowly roasted and then caressed by dragon’s fire, this roast of wild Bison is fit for the King in the North or the one in your backyard. Serve with your favorite sides, like Lannister Gold and Red Potatoes, Onion Knight Roasted Onions, you know nothing Jon Snow Peas, and some of Theon’s Favorite to round it all out, you will have a grilled feast of Thrones that will be sung about for ages. 

I am lucky enough to live in close proximity to a family run farm, which provides access to delicious, sustainably farmed meat, including delicious game. When told of our top-secret project, a delicious feast of Thrones, the owner gave me copious suggestions on meat and what to season it with. Finally, we settled on a gigantic roast of Bison and their own delicious (and organically farmed) herb blend.

3 to 4 lbs.

Bison Chuck Roast

3 tbsp.

wild game seasoning like Heritage Lane Organic Herbs blend

2 tbsp. 

Himalayan salt

1 lb.

mini golden potatoes

mini red potatoes

your favorite oil, olive, roasted garlic, etc.

freshly ground black pepper

freshly grated parmesan cheese

Method
  1. Preheat your dragons to about 275°F. If you don’t have a dragon or three, you can use a BBQ instead. Remove the cooking grids on one side and place a tray under where you will be placing the bison roast. I recommend the second burner in from the end to allow for optimum convection. Turn on the three remaining burners to low.
  2. Season the bison with a very generous helping of wild game seasoning and Himalayan salt. If you can’t forage for fresh herbs like rosemary, thyme, and garlic in the nearby woods, a fantastic option would be a blend like Heritage Lane’s Meat & Wild Game Seasoning.
  3. Add a little wine to the drip tray –if you can sneak it away from the Queen, if not, water or beef broth will do. Place your well-seasoned bison over the drip tray and close the lid on the grill. Slow-cook the roast for about an hour before starting to check on the temperature with a probe thermometer. Or, you can set and just-about-forget with the Napoleon Bluetooth Wireless BBQ Thermometer. Set it to let you know when the bison reaches your desired temperature 135°F for rare, 145°F for medium-rare.
  4. While the bison is slowly cooking thanks to some well-trained dragons, or a quality BBQ, it is time to prepare the side dishes for your meal. Start with the Lannister Gold and Red potatoes. Scrub the potatoes clean and toss them into a large bowl. Slice the onions into large chunks and add them to the bowl too. Season everything with your favorite oil and the remaining Himalayan salt. Pour them into the Rotisserie Grill Basket. Slide the rotisserie rod into place and adjust so that the basket will sit over the lit burners. Place the filled basket into the slots for the rotisserie rod and turn on your rotisserie motor.  Cook until the potatoes are tender – up to 2 hours.
  5. The roast has now been on for about an hour or more, the temperature should be around 120°F. It’s time to prep the last of the ingredients. Turn the side burner of your grill to low and place the Napoleon Stainless Steel Wok over it to heat. Add the butter and once it is melted, add the snow peas. Toss the peas in the butter and add the pepper, stir-frying them until they are tender-crisp. Keep warm.
  6. If you have an infrared SIZZLE ZONE™, crank that burner up to high. Sear the sausages until lovely grill marks have formed, then move them onto the grill to finish cooking all the way through. At this point, your bison should be pretty close to the ideal temperature, about 138 to 140°F. Remove the bison from the grill and sear it on all sides using dragon’s fire directly, or the SIZZLE ZONE will work too.  Rest the bison roast for at least 10 minutes before slicing.
  7. Serve everything together, dividing the potatoes and onions into their own kingdoms, tossing the snow peas with freshly grated parmesan, slicing up those sausages, and finally cutting into that roast and allowing everyone to enjoy a little taste of the seven kingdoms. 

You too can feel like a King in the North with this Roast. The grilled flavor is like a song of BBQ and Bison on your tongue. The seasonings creating a smoky symphony reminding your taste buds of what it must have been like to feast like a wildling. Rich Lannister Gold and Red potatoes, sweet and delicious grilled Onion Knight Roasted Onions, and smoky Sausages round the meal out. Just be careful that such deliciousness doesn’t invite hungry neighbors who will shamble into your yard like an army of frozen walkers.
