- 1 pkg (0.5 kg) hotdogs
- 8 to 10 fresh hotdog buns
- ¼ cup (59 ml) hoisin sauce
- 1 sliced/ribboned cucumber
- ½ small onion, thinly sliced
- 2 small red birdseye chilis, sliced
- Sriracha mayo for serving
- Lime and cilantro for garnish
Pickled Veggies
- 2 carrots, julienned
- 1 small daikon or parsnip, julienned
- ¾ cup (177 ml) ice
- ¼ cup (59 ml) rice wine vinegar
- ¼ cup (50 g) sugar
- 2 ¼ tsp. salt
- In a saucepan, combine the vinegar, sugar, and salt. Bring the mixture to a simmer until the salt and sugar are completely dissolved. While you are waiting for the vinegar mixture, clean and julienne the carrot and daikon. Add the ice to the vinegar mixture to cool it, then pour over the carrots and daikon. Store in the fridge for at least 30 minutes or until ready to serve.
- Slice your cucumber, onion, chili, and garnishes, placing them into separate dishes.
- Preheat your main burners or infrared sear station side burner to high. While the barbecue is warming, bring a wide and shallow pot with a lid to a simmer with just enough water to cover the bottoms of the hot dogs.
- Simmer the dogs for 5 minutes until well plumped and hot all the way through. Then sear them, brushing with hoisin sauce on all sides until nicely charred but not burnt. Feel free to grill the buns too.
- Load your hotdogs onto the buns layering the pickled carrots, cucumber, onion, chilis, and topping with a squeeze of lime, a few leaves of cilantro, and a generous squeeze of sriracha mayo.
