- 2 lb. (0.9 kg) ground brisket
- Salt and pepper to taste
- 4 to 8 slices pork belly
- Havarti cheese slices
- 4 brioche buns
- ¼ cup (59 ml) butter, melted
- bread and butter pickles
- Sliced red onion
Special Sauce:
- ¼ cup (59 ml) mayonnaise
- ¼ cup (59 ml) sour cream
- 1 tbsp. (15 ml) Worcestershire sauce
- Dash lemon or lime juice
- ½ yellow onion, grated
- It is best to keep the meat as cold as possible when making any kind of burger. Break the meat up and roll it into 4 oz. (113 g) balls. Refrigerate until you are ready to cook.
- In a bowl, combine the ingredients for the special sauce. Whisk together and set aside.
- Place a griddle onto the barbecue and preheat the grill to high, around 500°F (260°C)+.
- Prepare any toppings that are going onto the burgers right away. Butter the cut sides of the buns.
- When the barbecue is hot and ready, place the pork belly onto the griddle. You want to sear them well but allow some of that fat to render, we can use that in place of oil and it will add some delicious flavor to the burgers as they cook. Once crisp on both sides, move the pork belly to the cooking grids or warming rack of your barbecue.
- Place the meatballs onto the griddle with lots of space to spread out and season them well with salt and pepper. Using the flat of a spatula and something solid, like a rolling pin or meat mallet, press the meat until it is thin and flat.
PRO TIP: Use a piece of parchment paper as a barrier between the meat and the spatula so that the meat doesn’t stick to the spatula when you are done pressing. - Before you flip the burger over, add a small dollop of special sauce to each patty. This will help the other side caramelize quickly and give an extra hit of flavor.
- Toss those buttered buns onto the barbecue grates to toast and add a slice of cheese to each of the patties.
