Greek Style Grilled Halloumi Flatbread Recipe with Authentic Tzatziki Sauce is a perfect appetizer for any day of the week. Whether you are hanging out with your friends or even something that you can eat to break out of that weekday lunchtime rut. The unique and salty, unripened goat or sheep’s milk cheese deepens in flavor when grilled. What is truly exceptional about Halloumi is that it holds its shape when cooked. The outside is crispy and grilled perfection, and the interior is warm and chewy like cheese curds. Pair this with the sharpness of red onion, creamy tzatziki and cucumber to make a little bit of Mediterranean heaven.

  • 6 squares (approx. 750 g) Halloumi cheese
  • 12 mini pita rounds
  • 6 tbsp. (14 g) homemade authentic tzatziki sauce
  • ½ red onion, sliced thin
  • ½ cucumber, halved, sliced thin
  • handful cherry tomatoes, sliced
  • 1 cup (21 g) arugula, torn up
  • ¼ cup (28 g) feta cheese finely crumbled
  • Sliced olives for garnish

Authentic Tzatziki:

  • ½ cucumber, peeled and shredded
  • ½ tsp. (6 g) salt
  • 3 cloves garlic, minced/grated
  • 1 tsp. (5 ml) white vinegar
  • 1 tbsp. (15 ml) high quality extra virgin olive oil
  • 1½ cups (428 g) plain Greek yogurt
  • Cheesecloth
  • Fine mesh sieve
Method
  1. As with many things, tzatziki is best when you let it sit for a while so that the flavors can combine. Make this first. Roughly peel the ½ cucumber and grate it using the fine-er side of a box grater. Sprinkle the cucumber with salt and drain in a cheesecloth (or double paper towel) lined sieve over a bowl. While the cucumber is draining, measure and prep the other ingredients.
  2. Mix the garlic, white vinegar and olive oil. Squeeze any of the remaining moisture from the cucumber, then combine with the garlic mixture. Stir in the Greek yogurt and refrigerate until needed. 
  3. Preheat your barbecue to high, you will be using direct heat to grill the cheese. 
  4. In a bowl, combine the onion, cucumber, arugula (tear up larger pieces) and the feta. 
  5. Spray the pitas with a little cold water and then wrap them in foil. 
  6. Place the wrapped pita onto the barbecue and the Halloumi over direct heat. Grill the cheese for 3 minutes per side or until warm and grill marks have formed. 
  7. Top the pitas with some homemade authentic tzatziki sauce, some of the vegetable mixture, the grilled cheese and garnish with olives. 
  8. Serve hot immediately as an appetizer or assemble later for a fresh lunch on the go. Don't forget some fresh french fries (like I did) for a great street-style meal.
