Healthy BBQ Beef & Grain Bowl With Bok Choi Recipe
Wholesome and delicious, these healthy BBQ beef and grain bowls with bok choi will keep you full for a while. Succulent, marinated beef is sliced thin, served on a bed of whole grain rice, with grilled bak choi, carrot, zucchini, and roasted sweet potato. Portions are key to making this a successfully healthy meal, by going heavy on flavorful veggies, and lighter on meat and grains you get a super boost of fiber, and vitamins.

Flank steak
3 cups
whole grain rice, cooked
4 tbsp.
sesame oil, divided

Bak choi, washed

large sweet potato cubed

red onion, sliced thin

rice wine vinegar
toasted sesame seeds

MARINADE
3 tbsp.
garlic, grated or crushed
2 tbsp.
ginger grated
2 tbsp.
sesame oil
½ cup
soy
¼ cup
honey
1 tbsp.
sambal olek (or more to taste if you like it hot)
- For the Marinade:
Make a paste with the ginger and garlic, grating or grinding will do this easily. Add the sesame oil, soy, honey and sambal olek to taste. Place the steak into a nonreactive dish and pour the marinade over. Refrigerate for up to 8 hours. - Slice the onion thin, toss with the rice wine vinegar and set aside until serving.
- Preheat the grill to 500°F. Place the Napoleon grill topper to preheat too.
- Start with the sweet potato, peel and cut the sweet potato into bite-sized chunks. Season with 1 tbsp. of sesame oil, salt and pepper to taste. Wrap in foil and place onto the preheating grill on the warming rack.
- Once the sweet potato is on the grill, wash and peel the carrot, then slice the carrot and zucchini into matchstick sized chunks. Season with 1 tbsp. of sesame oil, salt and pepper to taste. Slice the bok choi in half and drizzle with the remaining sesame oil.
- Grill steak over direct heat for 4 to 5 min per side, allow to rest for 10 minutes under foil. Grill the carrots and zucchini in a grill topper and the bak choi directly on the grill for about 10 to 15 minutes or until tender-crisp.
- Once completely rested, slice the meat against the grain as thin as you can. Assemble these bowls beginning with about 1 cup of rice, 2 to 3 slices of meat, and loads of veggies. Garnish with red onion, green onion, and toasted sesame seeds, and maybe some Sriracha.
