Peanut Sauce:

  • 3 tbsp. (38 g) brown sugar
  • 2½ tbsp. (37 ml) rice vinegar
  • 2 tbsp. (30) soy sauce
  • ¾ cup (194 g) smooth peanut butter
  • 2 tsp. (10 ml) sambal olek (spicy chili paste, sub. sriracha) optional
  • 2 cloves garlic, grated

Shrimp:

  • 16 jumbo shrimp, peeled and deveined
  • Salt to taste
  • 1 tbsp.(15 ml) peanut or sesame oil
  • ½ lime, cut into wedges

To Serve (optional):

  • Rice
  • Seasonal vegetables
  • Soft boiled egg
  • Crushed peanuts
  • Sliced green onion
  • Lime wedges
Method
  1. First prepare the sauce. In a saucepan, combine the sugar, vinegar, and soy sauce. Stir over medium-low heat until just dissolved, then allow it to cool slightly. Then stir in the sambal, peanut butter, and garlic. Whisk until combined and it becomes a sauce. Set aside and refrigerate until needed. 
    **Depending on the peanut butter you are using, it may go weird and thick, so add ¼ cup of water and 1 tsp. of cornstarch while you whisk over low heat until the sauce becomes smooth once more.
  2. Preheat your barbecue to high, about 450°F (232°C).
  3. In a bowl, toss the shrimp with oil and salt to taste. Thread them onto skewers.
  4. Grill the shrimp over direct heat for 3 or 4 minutes per side. While they’re barbecuing, squeeze a lime wedge over the side that is facing up. Repeat when you flip them. 
  5. Serve the grilled shrimp on a bed of rice topped with the peanut sauce. Add your favorite seasonal veggies and toppings. Try sesame seeds, sliced green onion, and crushed peanuts, maybe a drizzle of extra peanut sauce, and a squeeze of lime.
