Lebanese, Israeli, or Pearl couscous are ideal for this recipe. Many major grocery stores have a small selection, and if you find it difficult, check with a local bulk food store. You're going to love this garlicky, healthy, and flavorful meal.

  • 1 lb. (453 g) chicken breast or thigh cut into 1-inch chunks
  • 3 tbsp. oil, divided
  • 3 cloves garlic, grated
  • 1½ tsp. smoked paprika
  • 2 tbsp. tomato paste
  • 1 lemon, juiced and zested, divided
  • Salt and pepper to taste
  • 4 pita or naan bread
  • ½ cup (140 g) plain Greek yogurt
  • 1 clove garlic, grated
  • 1 tbsp. lemon juice

Couscous Salad

  • 1 cup (180 g) uncooked Lebanese couscous*
  • ½ large English cucumber chopped
  • 1 cup (149 g) cherry tomatoes, halved
  • ¼ red onion, sliced thin
  • ½ cup (90 g) kalamata olives, chopped
  • 2 tbsp. (11 g) fresh dill, chopped
  • 2 tbsp. (11 g) fresh mint, chopped
  • 1 tbsp. pomegranate molasses or balsamic reduction
  • 1 clove garlic, grated
  • 1 tbsp. lemon juice
  • 3 tbsp. extra virgin olive oil
  • Salt and pepper to taste

*Lebanese couscous may be challenging to purchase. You can find it under the name Moghrabieh or use pearl couscous or Israeli couscous instead.

Method
  1. In a nonreactive bowl, combine 2 tbsp. oil, 3 cloves garlic, paprika, tomato paste, and 2 tbsp. lemon juice. Season to taste with salt and pepper. Stir in the chicken pieces and allow to marinate while you preheat the grill and make the garlic sauce. 
  2. Bring a saucepan of water to a boil and add the dry couscous, cooking until al dente, about 8 minutes. This is for Lebanese couscous, please follow the instructions on the package to cook other types of couscous. Drain the couscous, rinse, and allow it to cool to room temperature. You may wish to toss with a little oil to keep it from sticking.
  3. While you are waiting for the couscous, in another bowl, combine the Greek yogurt, garlic, and 1 tbsp. lemon juice. Keep refrigerated. 
  4. Preheat the barbecue to 400°F (200°C) by lighting two of your burners and leaving the remaining burners off. This will create a two-zone fire. 
  5. Chop the cucumber, tomatoes, onion, olives, dill, and mint. Place them into a serving bowl. Whisk together the balsamic, sugar, garlic, lemon juice, and olive oil. Season to taste with salt and pepper.
  6. Place the remaining 1 tbsp. oil into a bowl or cup and grab a heat-safe grill brush. 
  7. Grill the chicken over direct heat, moving to the cooler area of the grill to finish when they are becoming charred. When the chicken is nearly done, brush the pita with oil and grill them over direct heat.  
  8. Combine the cooled couscous with the vegetables and pour the dressing over top. Serve the salad with chicken skewers and grilled bread. Top with a drizzle or dollop of garlic yogurt.
