- 3 tbsp. butter, melted
- 1 cup (148 g) smoked beef
- BBQ Sauce to taste
- ¼ cup (60 g) sour cream
- ¼ cup (60 g) mayonnaise
- ½ lime, juiced
- ¼ cup (30 g) cotija cheese crumbled, sub feta
- Cilantro
- 1 package restaurant-style tortilla chips
- 1 cup (120 g) shredded Oaxaca cheese, sub mozzarella
- 1 red onion, sliced
- 1 green pepper, sliced
- Hot peppers to taste
- Limes for garnish
- Slice the onion and peppers, mince the cilantro, crumble the cotija, and grate the cheese. Set aside.
- Preheat the barbecue to 400°F (200°C), igniting all burners to medium.
- Shuck the corn and place the shredded beef onto a tray or into a heat-safe dish. Drizzle the beef with BBQ sauce to taste and melt the butter.
