Wild Boar Chops Marinated in Blueberry Tea Recipe

I have a goal of trying as many exotic meats as I can get my hands on. I wasn’t able to get Elk, but while looking I did find some boar chops that looked too good to pass up. Wild Boar, like pork, benefits from sweet flavors, so when a friend generously gave me some blueberry tea, I just had to use it on the boar. These Wild Boar Chops Marinated in Blueberry Tea came out succulent and amazing. The light sweetness of the tea, paired with a perfect reverse sear, and topped with a blueberry barbecue sauce are a little bit of a different take on the romantic dinner for two.

wild boar chops, bone in, frenched

1 cup

blueberry tea

½ tbsp.

balsamic vinegar

¼ cup

olive oil

Salt and pepper to taste

 

Quick Blueberry BBQ Sauce

1 tbsp.

coconut oil

2 tbsp.

onion, minced

1

clove garlic, minced

1 tbsp.

balsamic vinegar

¼ cup

honey

¾ to 1 cup

whole blueberries

Method
  1. Make the tea by steeping your blueberry tea sachet in 1 cup of hot (not boiling but not just tap water hot) water. If using loose leaf, use 1 tsp. of tea per cup. Steep for 3 to 5 minutes. Then allow it to cool.
  2. Whisk the oil and vinegar together in a nonreactive dish, add the tea and then the wild boar chops. Marinate in the fridge for at least 2 hours and up to 8.
  3. Preheat your grill to very low, 325*F to 350*F. Prepare for indirect grilling.
  4. Remove the chops from the marinade and discard the marinade. Pat the marinated wild boar dry with paper towels and then season them to taste with salt and pepper.
  5. Using a Napoleon Wireless Digital Thermometer, grill roast the boar chops over indirect heat for about 40 minutes, or until an internal temperature of 155*F is reached.
  6. While waiting for the boar to cook, make the sauce. Melt the coconut oil in a sauce pan and sweat the onions. Add the garlic and cook a little longer. Add the honey, balsamic and the blueberries and bring everything to a simmer until thick. Squish the berries as they get hot, and keep the sauce warm, but not simmering until your pork is ready.
  7. Remove the wild boar from the grill and allow it to rest under foil for 10 minutes. Preheat the side burner of your grill to high, or preheat your main grill to high, about 450 to 500*F.
  8. After resting, sear the boar for 1 to 2 minutes per side, or until perfect sear marks have formed and an internal temperature of 160*F is reached.
  9. Serve the pork with a salad of greens, feta, and blueberries, and some sweet potato fries, top it with the Blueberry BBQ Sauce you made.
