Recipe for Grilled Bison Strip Steaks Over Charcoal

Originally posted in August of 2011, these Grilled Bison Strip Steaks are made on a gas grill but they’re cooked over charcoal. Bison is low in cholesterol and high in protein. It has a flavor that is richer, akin to some very well aged beef. Like beef it should be served medium for best results. Allowing the compound butter to melt over the hot meat just before serving, and smearing everything, including those delicious potato wedges with cloves of melty, creamy, roasted garlic.

1 Napoleon Cast Iron Tray

Charcoal

Bison Strip Loin Steaks

2 tbsp.

McCormick black garlic powder

2 tbsp.

kosher salt

3 tsp.

freshly ground black pepper

 

SESAME ROASTED GARLIC

4

heads of garlic

2 tbsp. 

sesame oil

1 tsp.

GOAT CHEESE COMPOUND BUTTER

3 tbsp.

butter

2 tsp.

sesame oil

1 tbsp.

soft goat cheese

1 tsp.

dried parsley

 

POTATO WEDGES

4

fist sized potatoes cut into wedges

2 tbsp.

oil

salt and pepper to taste

parchment paper

Method
  1. Remove one set of cooking grids and four of the seven sear plates from the grill. Place the Napoleon Cast Iron Tray over the two burners that were revealed. Fill the bottom of the tray with a single layer of charcoal. Light the grill and allow the burners to ignite the charcoal, allowing it to heat and ash over.
  2. Cut the tops off the heads of garlic. Drizzle with the sesame oil and sprinkle with salt. Place them on a sheet of tin foil; wrap them tightly, and then put them on the grill while the charcoal heats.
  3. Prep the potatoes, placing the wedges into a bowl of hot water to soak for ten minutes.
  4. In a small bowl, mix together the butter, oil, and goat cheese. Place the butter mixture into some cling wrap and roll it into a cigar shape. Place it into the fridge to chill. In another bowl combine the black garlic powder, salt, and freshly ground pepper.
  5. Pat the bison steaks dry and season them with the black garlic mixture and set aside.
  6. Pat the potatoes dry with paper towel, toss with oil, salt and pepper. Place them in a single layer on a parchment lined baking sheet.
  7. Insert the probes of a wireless digital BBQ thermometer and set the alert for medium. Place the steaks, onto the cool side of the grill along with the potatoes. Cook everything for about ten minutes, then flip the potatoes. Continue cooking until the thermometer registers rare – about 130°F.
  8. Once up to temperature, sear the steaks over the lit charcoal until sear marks form, about two minutes per side.
  9. Rest the bison steaks for at least five minutes before serving, topped with a slice of goat cheese compound butter, the potatoes, and a clove of roasted garlic.
