Charcuterie boards are all the rage right now and it’s not hard to see why! Charcuterie boards are fun and creative, the hardest part is organizing the contents of the board. You can put anything you can imagine on a charcuterie board. So, I think you know where I am going with this… A Barbecue Charcuterie Board Recipe. Well, it’s more of an inspiration board stuffed with grilled meats, fruit and other delightful goodies. So, strap in, get those taste buds excited, and hang on for a wild ride! This recipe is great for vegetarians, can be vegan and is super easy for meat-a-tarians too. Just remember that when preparing food for people that don't consume meat, to provide a clean grilling surface or use a different grill.

Barbecue Charcuterie Board Recipe

  • 1 large steak
  • Salt & pepper to taste
  • sausages
  • chicken
  • meatballs
  • charcuterie meats

Fruit

  • 1 Watermelon, sliced into wedges
  • salt to taste
  • 1 pineapple sliced ½ inch thick (1.3 cm)
  • 1 bunch grapes – red seedless
  • 2 tbsp. (30 ml) balsamic vinegar
  • 4 tbsp. (60 ml) oil, divided
  • 1 block extra firm tofu
  • 1 clove garlic, grated or minced
  • 2 to 4 oranges, try for blood or cara cara

Vegan Japanese Eggplant

  • 1 eggplant, sliced ½ inch thick (1.3 cm)
  • salt to taste
  • 2 tbsp. (30 ml) sesame oil
  • 4 tbsp. (60 ml) rice wine vinegar
  • 4 tbsp. (60 ml) soy sauce
  • 1 tbsp. (28 g) Shichimi Togarashi (Japanese 7 spice)
  • 2 tsp. (8.5 g) sugar

  • Scottish cheddar
  • Goats cheese soft and hard
  • Mimolette
  • Soft brie like brebirousse
  • Sao Miguel cow cheese
  • Crackers
  • Baguette
  • Dark chocolate
  • Olives
  • Pickles
  • nuts
Method
  1. Start by slicing the tofu in half and then half again, then pressing the extra firm tofu with a heavy pan between two pieces of paper towel. While that is happening, juice one of the oranges, add 1 tbsp. of oil, and some minced garlic. Marinate the tofu in the orange mixture. 
  2. Wash and dry the grapes. Toss with 2 tbsp. oil and 2 tbsp. of balsamic. Marinate until ready to cook, 30 mins to an hour.
  3. Salt any chicken or steak and set aside. 
  4. Begin slicing any veggies and fruit for the grill for the board.
  5. Slice the eggplant and toss with salt. Set aside for 20 minutes and then drizzle with sesame oil, then combine the soy and vinegar and pour over. Season with Shichimi Togarashi.
  6. Because the cooked food will have a shorter shelf life than the meats and cheeses, it is suggested that you set up your charcuterie ahead of time, being ready for just before you grill the meat and vegetables. This ensures that your food will not wilt and remain warm when serving.
  7. Preheat the barbecue to high, you will be using direct heat for the most part. You can leave one burner off or make sure your warming rack is in place if you have removed it. 
  8. Sear the steak, chicken, sausage or other meat over direct heat until the correct internal temperature. Allow to rest at least 5 minutes before serving.
  9. *For vegetarian and vegan guests, remember to use a barrier to grill any non-meat foods on your barbecue if meat has been cooked on it previously. 
  10. Remove the tofu and the grapes from the marinade and sear them over direct heat until grill marks form or the grapes begin to char and burst. 
  11. Salt and then sear the watermelon until grill marks form.
  12. Slice and arrange the grilled meats and vegetables on the charcuterie boards for everyone to enjoy.
