Ingredients
  • 1 loaf bread, your favorite crusty bread
  • 1+ cup (120 g) shredded cheese, use your favorites
  • ½ cup (125 ml) salted butter, melted
  • 2 to 6 cloves garlic, grated
  • Parsley to taste, or your favorite herbs
  • ¼ tsp. (1.4 g) red chili flakes, optional
  • Fresh green onion, tomato, basil, bacon bits, etc for topping, optional
Method
  1. If you are making this right away for serving, preheat your barbecue to 350°F (180°C), preparing to use indirect heat.
  2. Take your loaf and slice into it cutting down to the last ¼ inch (0.6 cm). Turn the loaf 90-degrees and repeat.
  3. In a heat-safe bowl, melt the butter and stir in the garlic and parsley.
  4. Spoon or brush the garlic butter between the sliced edges of the bread, reserving a little butter for after baking.
  5. Stuff the cheese between all of the cut edges and don’t be worried if it gets on the top of the bread too. Everyone likes crunchy cheese. If there is cheese leftover, save it for later.
  6. Wrap the bread in foil and place it onto the cooking grids over the unlit burners. Bake the bread for 15 or so minutes. After baking in foil, open the foil and brush with the leftover butter and top with any remaining cheese. Bake for another 5 to 10 minutes.
  7. Serve immediately topped with fresh green onion, tomato, basil etc.

PRO TIP:
If you aren’t serving immediately, use room temperature butter instead of melted, and follow the instructions. Then wrap the bread in foil and place into the fridge until you are ready to bake.
