This recipe for Individual BBQ Mac N Cheese Bread Bowls combines like every single thing that is amazing about garlic bread and macaroni and cheese and mixes them into one delicious combination. So, grab some sturdy buns, make the most easiest mac ever (it takes less time than the blue boxed stuff!) and get your grill started!

Bread Bowls

  • 6 sturdy buns with a crusty outside
  • ¼ cup (58 g) butter, softened
  • 3 cloves garlic, minced
  • 2 tsp. (1 g) parsley

Macaroni & Cheese

  • 1½ cups (150 g) macaroni
  • 2/3 cup (0.66 ml) evaporated milk
  • 1 tsp. (4 g) Dijon mustard
  • 1 cup+ (150+ g) shredded cheese, cheddar, Monterey jack, etc.
  • Salt and pepper to taste
  • 1½ tbsp. (22 ml) butter melted
  • ¼ cup (23 g) parmesan
  • 2 tsp. (1 g) parsley
Method
  1. Preheat the barbecue to 400°F (200°C), creating a hot and cool zone by lighting one or two burners to medium-high.
  2. Shred the cheese and take the tops off the buns, then cut/scoop out the insides, leaving about 1/3-inch (0.8 cm) all around to ensure the bun still has structure. 
  3. In a bowl blend together the butter, garlic and parsley, then spread the softened garlic butter on the inside of the bun tops and bowls.
  4. Bake the bowls and anything you pulled out of them on a tray, using indirect heat (not over lit burners) for 12 to 15 minutes, until everything is golden brown and crisp.
  5. Place a wide-bottomed pot with a lid over high heat. Add the macaroni noodles and pour over water until just covered. Bring to a boil, stirring and cooking until the liquid is nearly gone and the noodles are a little less cooked than al dente. About 6 mins.
  6. Once the pasta is cooked, add the evaporated milk and mustard bringing the mixture back to a boil again. Turn off the heat and add the cheese, stirring until the cheese has melted. Season to taste with salt and pepper. Add any extras to the mac and cheese you could want. These include bacon, hot peppers, veggies, crispy onions and whatever else you can imagine. 
  7. Crush the crispy “innards” of the bred that was baked, then toss the crumbs with the melted butter, parmesan and parsley. Fill the bread bowls with the macaroni and top with crumbs. 
  8. Bake at 400°F (200°C) for 5 min until the topping is crisp and the insides bubbly.
