Ranch Wings with Buffalo Dip

  • 2 to 4 lbs. (1 to 2 kg) mixed chicken wings
  • 1/4 cup (34 g) ranch seasoning
  • 2 tbsp. (30 ml) oil
  • 2/3 cup (158 ml) Frank’s Red-Hot sauce or equivalent
  • 6 tbsp. (85 g) butter, melted

Jalapeno Popper Dip

  • 1 brick (250 g) cream cheese, room temperature
  • 1 cup (237 ml) sour cream
  • 1½ cups (340 g) shredded cheese, divided
  • 6 slices bacon, cooked crisp, crumbled
  • 4 jalapeno peppers, 3 diced, 1 sliced
  • 1 clove garlic, grated/minced
  • Green onion for garnish
  • Chips, crackers, and fresh veggies for serving

Cheeseburger Sliders

  • 24 slider buns
  • 2 lbs. (2 kg) ground beef
  • 1 to 2 tbsp. (8.5 to 17 g) your favorite burger seasoning or use salt and pepper to taste
  • 12 slices processed cheese
  • 1 small onion, sliced or diced
  • 24 pickle slices
  • 2 tbsp. (30 ml) burger sauce/mayo
  • 1 cup (170g) shredded cheese
Method
  1. **OPTIONAL** Dry and then toss wings in 1 tbsp. (14 g) baking powder and a couple pinches of salt. Spread them out over a rack on a baking sheet and allow them to dry for 24 hours for the crispiest wings.
  2. Light the barbecue using the bottom burners and preheat the grill to 350°F (177°C). 
  3. Toss the wings with oil and ranch seasoning. Spray your Napoleon Rotisserie Basket with nonstick spray and fill the basket with the seasoned wings. Slide the basket onto the spit rod and then place it onto the grill, with the basket over lit burners. You may want to consider having the basket to one side or the other to maximize grill space, as well as placing a drip tray under the wings.  
  4. Grill the wings over direct heat for about 60 minutes, or until reaching an internal temperature of 165°F (74°C).
  5. Meanwhile, using your side burner or sear station, or your stovetop, cook the ground beef, seasoning with your favorite burger seasoning, or just salt and pepper. 
  6. While the beef is cooking, whisk together the Frank’s Red-Hot with the melted butter and any seasonings or flavor adds you like, then set aside. 
  7. Once the sauce is ready for the wings, stir together the cream cheese, sour cream, 2/3 of the shredded cheese, 2/3 of the bacon, the diced jalapeno, and garlic. Spread this into a cast iron frying pan or baking dish, topping with the remaining sliced jalapeno, bacon, and shredded cheese. Bake over direct heat for 30 minutes or until bubbly-hot and melted. 
  8. Finally, remove the cooked ground beef from the burner and drain off any excess grease. On a baking sheet, lay down the slider buns, top with sliced cheese, followed by ground beef, sliced onion, pickles, and burger sauce. Top with the shredded cheese and the top half of the slider buns. 
  9. Place the sliders onto the barbecue and turn the burner they are over off to prevent burning. Bake until the cheese is melted, and everything is nice and hot about 15 minutes. 
  10. Top the Jalapeno popper dip, and let’s face it, the wings too, with the green onion, because you’ve got to salt-bae that garnish! Serve everything hot off the barbecue much to the delight of your game-day friends and family.
