BBQ Breakfast Smash Burger Recipe

Why would you make a BBQ Breakfast Smash Burger on the grill? This recipe sort of came to me in a dream. Smash burgers are a relatively versatile way of cooking your hamburgers. The lacy and crispy crust you get, while the interior meat still remains succulent. But. Imagine that for breakfast or brunch. I got excited. This isn’t just a burger with some breakfast foods crammed on it. No. This recipe takes your patty and makes it from breakfast sausage, sandwiched between griddle cake buns and topped with bacon, egg, cheese, and a lightly spicy spread. Have fun with your next brunch or breakfast by smashing out these impressive breakfast burgers.  

By all means, skip any of these steps to achieve your ideal breakfast nirvana. Skip the griddle cakes and use English muffins. Use scrambled eggs, pre-packaged hashbrowns, or hollandaise. Whatever makes your life more delicious.

Hot Hollandaise Spread

  • 1 large egg yolk
  • 2 tsp. lemon juice, fresh
  • 8 tbsp. butter, unsalted, melted
  • 1 small hot pepper, minced (jalapeno, poblano, bird’s eye)
  • Salt to taste

Griddle Cakes

  • 1½ cups (225 g) flour
  • 2 tsp. baking powder
  • 1 tbsp. sugar
  • 2 tsp. salt
  • 1 egg
  • 1½ cups (355 ml) milk
  • 2½ tbsp. melted butter
  • 2 tbsp. maple butter
  • Ring molds

Everything Else

  • 1 lb. (454 g) ground sausage, breakfast style
  • 8 slices, bacon
  • 4 large eggs
  • 4 slices American cheese
  • Butter and maple syrup for serving

Crisp Hashbrowns

  • 2 large russet potatoes, grated
  • 2 tsp. cornstarch
  • Salt and pepper to taste
  • 2 to 4 tbsp. neutral oil
Method
  1. Start with the Hot Hollandaise. Mince the hot pepper.  Melt the butter over gentle heat, moving it constantly, until the butter stops foaming. In a tall and narrow container, combine the yolk and lemon juice. Insert the head of a stick blender and turn it on. Stream in the hot butter until a thick sauce is achieved. Drop in as much of the minced hot pepper as you wish and blend a little more. Set aside and keep warm. 
  2. If you have maple butter, cut the 2 tbsp. into small cubes or balls and then freeze them. 
  3. Wash and peel the potatoes, grate them into a bowl of cold water. 
  4. Set up the barbecue by replacing the grids with your griddle. Place a frying pan on the remaining cooking grids. Ignite the burners, setting the ones below the griddle to medium-high, the ones under the frying pan to a little lower. 
  5. While everything is heating, prepare the sausage balls by dividing the meat into 4 equal portions. Remove the potatoes from the water and squeeze out as much liquid as possible. Transfer to a clean and dry bowl, sprinkling with cornstarch and seasoning to taste. 
  6. Make the batter for the griddle cakes. Whisk together the flour, baking powder, sugar and salt. Then whisk in the milk, egg, and melted butter. You can stir through the maple butter chips or sprinkle them on when cooking. 
  7. Bring everything out to the barbecue.  Oil the griddle, the ring molds, and frying pan. Put down the bacon on the cooking grids to cook. Dollop a few tablespoons of batter into the ring molds on the griddle – add the maple butter if you haven’t already. Lay down a couple of handfuls of hashbrowns into the frying pan, spreading out so that they’re thin and about the same size as the griddle cakes in the ring mold. 
  8. After 3 to 4 minutes, the griddle cakes should be golden on the bottom and starting to bubble on the sides, remove the mold and flip the cakes, cooking for an additional 3 to 4 minutes. Repeat with the remaining batter. 
  9. Flip the hash browns when one side is crisp and golden. Add extra oil as needed. Flip the bacon when it’s nice and crisp to finish on the other side.  Repeat with the remaining potatoes. 
  10. Once the griddle cakes are finished move them to the warming rack to stay warm. 
    Take the sausage balls and place them onto the griddle. Use a spatula to flatten the sausage into a thin patty.
  11. Cook for a few minutes on each side. When you flip, top the sausage with the cheese. 
  12. Finally, fry the eggs over easy. 
  13. Assemble by brushing maple syrup onto the bottom griddle cake, placing the sausage patty on top of that, layering the hashbrown, bacon, and then finally the egg. Brush the inside top of the top-bun griddle cake with some hot hollandaise and crown this ballistic barbecue breakfast sandwich. Tuck in!
