Roadhouse Potato Nachos Recipe

Layers of fried potatoes are hiding morsels of cheese, saucy pulled pork, and so much more. Make them as colorful as you want, or keep things simple, this crazy potato recipe is up to you.   • 6 medium russet potatoes, sliced thin
  • 4 tbsp. oil
  • Salt, pepper, and paprika to taste
  • 2 cups (500 g) pulled pork in sauce
  • 2 cups (470 g) shredded cheese, use a mix of your favorites
  • ½ red onion, sliced very thin
  • 2 jalapeno peppers, sliced
  • 2 green onions, sliced
  • ½ cup (123 g) sour cream
  • 4 slices bacon, cooked crisp, crumbled
Method
  1. Replace your cooking grids with the 2-Sided Porcelain Enameled Cast Iron Griddle. Preheat your barbecue, igniting the burners under the griddle to medium. 
  2. Give your potatoes a good scrub and then slice them as thin as possible using a sharp knife or mandolin. Season the sliced potatoes with salt, pepper and paprika to taste. Prepare the remaining ingredients. 
  3. Spread some of the oil onto the griddle and, in batches, fry the potato slices on each side until crisp.
  4. Once done, preheat the barbecue to around 400°F (200°C). 
  5. Layer the potatoes, cheese, pulled pork, onion, and jalapeno onto a stainless steel pizza pan with a layer of oil or parchment. Top the pile of potatoes and pork with a healthy helping of cheese on top. 
  6. Bake on the barbecue, with the lid down, for 10 to 20 minutes, or until everything is hot, melty, and bubbling. 
  7. Remove from the grill and top with sour cream, green onion, and optional bacon bits. Serve immediately.
