  • 2 steaks ribeye*, thick cut
  • Salt to taste
  • 4 oz (100 g) semi-sweet chocolate, melted
  • 2 tbsp. (10 g) fresh ground coffee
  • 1 tsp. (2 g) garlic powder
  • 2 tsp. (4 g) freshly ground pepper
  • Ground chili flakes to taste (grind hot chili flakes in a mortar and pestle or spice grinder)
  • Salt to finish

*You can also use a strip or your favorite cut as long as the appropriate grilling technique is used.

Method
  1. Remove the steaks from the fridge at least 45 minutes before you plan to cook. Place them onto a rack over a board or a tray and season them thoroughly with salt. Allow the salted steaks to sit for 45 minutes. They cannot be cold for the chocolate rub. 
  2. While your steaks are relaxing with the salt, melt the chocolate using gentle heat of your choice. A double boiler or the microwave will work nicely. Once melted, stir in the coffee, garlic powder, pepper, chili flakes and some salt to taste. Be aware of the amount of salt that you used on the steaks initially and season accordingly.
  3. Preheat your barbecue to 300°F (149°C) preparing to use the indirect grilling method. You can use the warming rack or place the steak between lit burners, away from direct heat. 
  4. Spread the chocolate mixture onto the steaks and place them onto the barbecue over unlit burners, to gently cook for between 30 and 60 minutes, or until an internal temperature of 120°F (49°C) – rare. 
  5. Remove the steaks from the grill to rest while you preheat interior burners to high or preheat your Infrared SIZZLE ZONE sear station side burner to medium-high. 
  6. Sear the steaks over direct heat until grill marks form. You may want to consider flipping several times and frequently to ensure that the chocolate doesn’t burn. 
  7. Serve the steaks with your favorite seasonal sides like roasted potatoes and brussels sprouts.
