
Double Seared, Sous Vide, Beef Tenderloin Recipe
Having a dinner party for New Years? Or just want an easy meal to make when company’s coming? Not to worry! This Double Seared, Sous Vide, Beef Tenderloin is so easy, your guests won’t even know that you’ve done any cooking because you spent most of your time with them instead of in the kitchen. Using the Joule by Chef Steps to gently cook the tenderloin while you do more important things is the best. Searing before and after creates intense flavor, especially when paired with the seasonings and a splash of port.

1½ to 2-pounds
beef tenderloin, preferably center-cut
½ tbsp.
kosher salt
½ tbsp.
dehydrated garlic
Freshly ground black pepper to taste
1 tbsp.
butter
3 tbsp.
port – I used a sweet cherry port
2 cloves
garlic, crushed
3 sprigs
fresh thyme

- Preheat your Infrared SIZZLE ZONE™ Side Burner to high, remember to raise the grids to the high position if using a Prestige® or Prestige PRO™. If you don’t have a side burner, preheat two burners to high on your grill.
- Season the beef tenderloin on all sides with the salt, dehydrated garlic, and freshly ground black pepper. Sear the tenderloin on all sides – even the ends – until nice grill marks form.
- Set up your sous vide cooker, preheating to 140°F while the meat cools a little.
- Add the seared tenderloin to a food safe, zip-lock bag. Add the butter, garlic, thyme, and splash of port to the bag. Remove as much air as possible from the bag and seal it before submerging in the water bath.
- Cook the beef tenderloin for three hours. Once done, remove the bag from the water, then remove the meat. Reserve the liquid from the bag to make gravy if wanted.
- Preheat your side burner, or main burners to high once more. Pat the meat dry with kitchen towels then sear the tenderloin on all sides once again, until a dark crust forms on the outside of the meat.
- Serve with mixed grilled veggies and your favorite potato side dish.
