Easy Pork Tenderloin Recipe

Pork tenderloin is an easy-to-access cut that will feed a small family. It's quick and easy to cook, with results that can be out of this world. Add to that a fast sauce with pantry staples and you have a great meal that's premium for a penny. Get excited for a fast and simple dinner that can look gourmet without deflating your pocketbook. A swift sear, followed by a gentle roast, leaves this tenderloin succulent and savory, while the crispy potatoes and jammy onions provide a flavorful base that pairs perfectly with the honey mustard sauce. Simple substitutions allow you to use what's on hand for this recipe, and the results will have you reaching for seconds.

Easy Pork Tenderloin Recipe

  • 1lb (450 g) Pork tenderloin
  • 4 small potatoes
  • 1 small red onion
  • Salt and pepper to taste
  • 1 tbsp. oil

Honey Dijon Sauce

  • 1 clove garlic, minced/grated
  • 4 tbsp. (59 ml) honey
  • 1 tbsp. Dijon mustard
Method
  1. Season the pork with salt and pepper to taste. Allow the pork to rest on a rack for at least 40 minutes or in the fridge overnight. 
  2. Prepare the potatoes by scrubbing them and then slicing them into small cubes or discs. Slice the red onion. Par boil the potatoes for 7 to 10 minutes, until just a little less than fork tender. Drain, add the onion, drizzle with oil, and season with salt and pepper. 
  3. Preheat your barbecue to 350°F (180°C), creating a two-zone fire. Place a cast iron frying pan over the lit burners to preheat as well. 
  4. In a bowl, combine the garlic, honey, and mustard. 
  5. When the grill is ready, use heat-resistant gloves to move the hot pan to the “off” side of the barbecue and toss in the oiled potatoes and onion. Sear the pork on all sides. Move the cast iron frying pan back over direct heat, moving the pork to the “off” side of the barbecue to finish. If you have a side burner, ignite it, and set to low, placing your honey mustard mixture over top to warm. Or, you can place the saucepan with the honey mustard mixture onto the "off" side of the barbecue next to the pork. 
  6. Before you close the lid, brush the pork with the honey mustard mixture. Cook, with the lid closed, for 5 to 7 minutes, then give the potatoes a toss, and the pork a flip and another brush. Cook for another 5 to 7 minutes, or until the pork reaches an internal temperature of around 140°F (60°C).
  7. Remove everything from the barbecue. Rest the pork for at least 5 minutes before slicing and serving on a bed of potatoes and drizzled with remaining sauce. *If you do not have a side burner and used the sauce as a baste, bring the sauce to a simmer while the pork is resting, before you serve.
