Quick Pizza Dough
(Storebought fresh is fine)
3 tbsp.
flour for dusting
1 tbsp
cornmeal for dusting
½ cup
mozzarella sliced or shredded
¼ cup
garlic butter, melted
¼ cup
pizza sauce,
or try fresh salsa or bruschetta mix
½ cup
shredded cheddar cheese
extra old/white cheddar recommended
½ cup
shredded Monterey jack cheese
½ cup
shredded Havarti cheese
8 slices
fresh mozzarella
2
cloves garlic, grated
½ tbsp.
parsley flakes,
or small handful of fresh parsley, chopped
¼ cup
freshly grated parmesan
- Preheat the grill to 425°F with the Napoleon Pizza Stone on it. Use indirect heat.
- Dust your countertop with the flour and roll out the pizza dough so that it is your desired thickness. Sprinkle your Napoleon Pizza Spatula with cornmeal and arrange the pizza on the spatula.
- Sprinkle or lay the mozzarella about half an inch from the edge of the crust. Wet the dough with a little water and fold it over the mozzarella to create the stuffed crust.
- Brush the entire pizza with garlic butter and place it onto the preheated pizza stone for about 15 to 20 minutes, or until it’s crispy on the bottom and starting to brown.
- Spread the tomato sauce on the pizza then add the shredded cheddar, Monterey jack and Havarti. Lay down the sliced mozzarella, then sprinkle with fresh garlic and parsley.
- Bake with the lid down for 5 to 10 minutes or until the cheese is melted and starting to brown. If you aren’t getting the golden goodness you want, use the rear burner on medium-low to add a little extra heat on top. Remember to rotate the pizza for even browning.
- Use the pizza spatula to remove the pizza. Leave both the grill and pizza stone, to cool together. Top your pizza with the freshly grated parmesan and then slice and serve.
