BBQ Cheesy Buffalo Chicken Dip:

cooked chicken breasts, shredded
1 package (8 oz.)
cream cheese, room temperature
½ cup
sour cream
1/3 cup
Franks Red Hot or similar hot sauce
¼ tsp
garlic powder
¼ tsp.
onion powder
1 cup
shredded cheese, mozzarella, cheddar or your fave
BBQ Meatballs:

frozen sirloin meatballs
1 tbsp.
Montreal steak spice
½ tbsp.
oil
BBQ Bite-Sized Potatoes:
1 package
bite-sized hash browns
1/3 cup
shredded parmesan cheese
1 tsp.
garlic powder
1 tsp.
dried dill
½ tbsp.
oil
- If you haven’t pre-cooked your chicken breasts, preheat your grill to medium-high, about 400°F. Season the chicken to taste with salt and pepper if you like. Grill the chicken for about 5 minutes per side over direct heat, then move the chicken off the heat until finished. Allow the chicken to rest until cool and then shred.
- Preheat the grill to 400°F, turning the burners on to medium-low.
- In a bowl combine the cream cheese, sour cream, hot sauce, garlic and onion powder, half of the cheese and finally the chicken.
- Spread the mixture in a baking dish, casserole or other oven-safe dish. Sprinkle the top with the remaining cheese.
- In a bowl, toss the frozen meatballs with the oil and steak spice.
- In a separate bowl, toss the frozen, bite-sized hash browns with the shredded parmesan, garlic powder, dill and oil.
- Place a stainless steel topper or perforated pan over direct heat. Fill a rotisserie basket with the seasoned meatballs and arrange the basket on the rotisserie spit rod so that it is off towards the side of the barbecue where the potatoes are.
- Add the seasoned hash browns to the stainless topper and place the rotisserie on the grill and turn it on. Place the buffalo dip onto the barbecue and close the lid. Cook for 10 minutes. Open the lid and flip the potatoes every 5 minutes until everything is done. *You have to keep an eye on those potatoes to ensure they do not burn.
- Using heat resistant barbecue gloves, pull the BBQ Bite-sized Potatoes from the barbecue. Remove the BBQ Cheesy Buffalo Chicken Dip and place it on a heat-safe surface to cool a bit. Remove the meatballs from the grill too.
- Garnish the buffalo dip with some fresh herbs like chives or dill. Serve everything together. You can scoop or dip the meatballs and bite-sized potatoes, you can also serve this with some extras like tortilla chips and fresh vegetables.
