- 4 chicken breasts
- Chicken barbecue seasoning to taste
- 16 slices prosciutto
- 1 large, sweet bell pepper, sliced
- 1 small red onion, sliced
- 1 cup (120 g) cheese*, shredded
- ½ cup (120 g) sour cream
- 1 bunch chives, sliced
- 1 clove garlic, minced
- 1 to 3 lemon wedges, juiced
*Use your favorite cheese for this recipe or whatever you have on hand, just make sure not to skimp out. Cheddar is a good go-to, however, a smoked gouda or creamy Emmenthal can elevate the dish when you are looking to get fancy.
- Preheat your barbecue to 375°F (191°C) by lighting one to two burners to medium and leaving one to two burners off, creating a two-zone fire.
- While the barbecue is warming, butterfly the chicken breasts open horizontally so that they open like a book. Season the chicken thoroughly with your preferred barbecue seasoning, then layer the pepper, onion and shredded cheese on the open breasts.
- Lay two slices of prosciutto side by side horizontally. Place another slice in the middle of one so that it looks like an uppercase ‘T’ and do the same thing so that your prosciutto resembles more of a chunky + sign.
- Lay a chicken breast on the prosciutto and wrap the two long ends over the top and bottom of the chicken, then fold the shorter ends over the sides of the chicken. Repeat with all of the chicken.
- Grill the wrapped chicken over direct heat, seam side down, until good sear marks form. Flip the chicken and repeat. Once grill marks have formed, move the wrapped and stuffed chicken to the “cool” side of the barbecue to finish cooking, until they have reached an internal temperature of around 160°F (71°C).
- While the chicken is cooking, add the chives, garlic, and lemon juice to the sour cream. Stir and set aside.
- Remove the chicken from the barbecue and allow it to rest for at least 5 minutes before serving topped with a drizzle of cream sauce.
