  • 2 pints (approx. 1200 g) cherry or grape tomatoes
  • 3 cloves garlic, minced or grated
  • 1 shallot, sliced 
  • 1- 8-ounce (227 g) block of high-quality feta cheese
  • ¼ cup (60 ml) olive oil 
  • Salt, pepper, and oregano to taste
  • 2¾ cups (284 g) dried pasta like rigatoni
  • 1 cup pasta water, reserved
  • Fresh basil for serving
  • Lemon zest for serving
Method
  1. Set up the barbecue for indirect cooking by turning on one to two burners, leaving burners in the middle of the barbecue off. Preheat to 400°F (205°C). You can also do this with a charcoal barbecue. Consider adding a light wood like pecan, alder or oak to the charcoal to smoke the meal a little too. 
  2. While the barbecue is heating, wash the tomatoes and then add them to a large baking dish along with the shallots and garlic. Drizzle the tomatoes with half of the olive oil, season with salt. Nestle the brick of feta cheese in the middle. Pour the remaining oil over the feta and season everything with pepper and oregano.
  3. Place the baking dish, uncovered, over the unlit burners on the barbecue and close the lid. Bake for 30 minutes. After 30 minutes, turn the burners up to high and bake an additional 10 minutes to ensure everything gets caramelized on the outside. 
  4. While the feta is baking, bring a pot of salted water to boil. Cook your selected pasta until al dente, between 7 and 15 minutes depending on the shape. Try to time it so that the pasta is done just as you need to pull off the feta. Before you drain the pasta reserve about a cup of pasta water. 
  5. Once off the grill, use a sturdy spoon to crush the tomatoes and mix them with the melted feta. At this time, you can also add grilled vegetables or some chopped, grilled meat (if you prefer a non-vegetarian option). Pour in the pasta and begin to mix. Add a little of the pasta water, a few tablespoons at a time, as you are mixing to ensure that the sauce becomes super creamy. Garnish with sliced basil and lemon zest.
  6. Serve with your favorite sides like garlic bread and a big salad for an amazing and easy weeknight meal. 

TIPS AND TRICKS

  • Use a short pasta as opposed to a long pasta like spaghetti or fettuccini 
  • Do not use crumbled feta or low-fat feta, splurge if you can for a better-quality brick because it will melt far better.
