Smash Style Chorizo Tacos Recipe

This feast is a fiesta and you’re going to be the top host when you make these delectable tacos.

- 1 lb. (500 g) Chorizo uncased
- 2 cups (240 g) Oaxaca cheese, grated (sub mozzarella)
- 6 tortilla shells, small
For serving
- lime
- White onion
- Avocado
- Replace your cooking grids with the griddle and preheat your gas or charcoal grill to medium-high with the burners or coals directly below the griddle.
- If you can’t find uncased chorizo, cased is fine, just remove the outer layer. Divide the chorizo meat into 6 and roll it into balls, about 3 ounces (85 g) each.
PRO TIP: Use a ¼ cup scoop for fairly even division.
Shred the cheese and prep the toppings while your BBQ is preheating. - In batches, place down a chorizo ball and top with a tortilla. At the same time, lay down a handful of cheese next to it. Using a strong and large, flat spatula, press the tortilla down like you would when making a smash burger. The thinner, the better so that you get that crispy meat. After 2 to 3 minutes, use the spatula to scrape up the meat before transferring it onto the cheese. Then, take both and flip so that the tortilla is down and cook for an additional minute. Repeat with all chorizo balls.
- Serve your tacos topped with white onion, avocado, and a squeeze of lime. Feel free to add your favorite toppings too.
