How to Reverse Sear the Perfect Steak

The perfect steak starts with the perfect cut...ask for meat with a marbled fat distribution and approximately 1" thick. The fat acts as a natural tenderizer while cooking and will keep the meat moist and juicy.

  • Preheat your grill to low, about 300°F.

  • Butter and season your steak with your favorite spices and salt.

  • Insert a digital meat thermometer, like Napoleon's Wireless Meat Thermometer, and place the steak over indirect heat.

  • Cook for 20 to 40 minutes with the lid down, until the meat reaches a temperature of 125°F internally.

  • Remove the steak and allow it to rest for 5 to 15 minutes. While it's resting, preheat your Infrared SIZZLE ZONE™, or preheat your grill to high, about 500°F.

  • Once rested, place the steak over direct heat and sear for a minute.

  • Turn the steak 45° and sear or another minute before flipping.

  • Repeat the sear and turn on the other side of the steak.

You may now serve immediately because you have already rested the steak prior to searing.
