Creamy Lemon Chicken Recipe

Some days, you want something that is easy, fast, and delicious. This recipe for Creamy Lemon Chicken is the perfect weeknight meal that will get dinner onto the table in less than an hour. Deep and bright flavors, perfect for spring, and filled with nutritious ingredients, there’s nothing this recipe doesn’t do. I shared this recipe with someone, and even their picky eater ate it without fuss. The sauce is perfect on everything, so serve it over top your favorite sides and veggies too.

  • 4 chicken breasts or 8 thighs
  • Salt, pepper, garlic, or herb seasoning to taste
  • 2 tbsp. butter
  • 2 cloves garlic, minced
  • 2 tbsp. flour
  • 1 whole lemon, juiced and zested
  • ½ cup (125 ml) chicken stock
  • ½ cup (125 ml) cream*
  • Pasta, rice, or potatoes and seasonal veg for serving

Method
  1. Place the Napoleon Grill Roasting Pan onto the grill, you can also use the Cast Iron Frying Pan.
  2. Preheat the grill, lighting all burners, setting two to high, and the ones under the pan to medium-low. 
  3. Season the chicken thoroughly with salt, pepper, and garlic powder, or use your favorite seasoning blend.  
  4. Grill the chicken over direct, high, heat until sear marks form. While the chicken is searing, add the butter and fry the garlic. Once the garlic is fragrant, add the flour to the pan and combine. Add the stock, and cream. Allow the liquids to come to a simmer and add the chicken.
    PRO TIP: Butterfly chicken breasts to cook them faster. Just remember not to overcook them.
  5. Finish the chicken in the simmering sauce mixture, until it reaches an internal temperature of 165°F (74°C). While the chicken is finishing, use the hot side of the grill to cook some of your favorite seasonal sides. 
  6. Once the chicken is up to temperature, finish it with the lemon juice, remove from the heat, and rest. Serve the saucy chicken over potatoes, or rice, or even pasta, with your favorite seasonal sides. 

*Using alternate milk ingredients:

You can use alternatives to the cream, sour cream or plain yogurt will add additional tang to the dish this can break, so temper them by adding some of the hot stock and lemon juice to them before adding the resulting mixture to your pan. 

You can also sub in coconut cream from the can, however, if you are using an alternative milk like oat or cashew, you will want to make a roux by combining equal parts flour and butter in a separate saucepan over low heat, then adding the alt-milk like you are making a cream sauce, before adding it to the stock and lemon juice.
