Recipe For Homemade Hawaiian Style Loco Moco

A few things happened this weekend. The biggest thing being that the clocks turned back to “standard time”. Knowing that it would be very dark (far too early) I wanted to eat something fun, something bright, something tropical to make me think of sunshine and sandy beaches. That’s where Loco Moco comes in. What is Loco Moco you ask? It’s a Hawaiian delicacy that gained its name from some college kids before gaining popularity. It can be found at pretty much any café in Hawaii. It’s a delicious hamburger patty that is served on a bed of rice, topped with a fried egg and loads of gravy.

Recipe For Homemade Hawaiian Style Loco Moco

2 lbs.

freshly ground sirloin

1 clove

garlic, grated

1

sweet onion, chopped

2 tbsp.

butter

cooked Japanese sticky rice

Hawaiian black salt and chopped chives for garnish


Loco Moco Gravy:

¼ cup

butter

3 tbsp.

flour

2 tsp.

mustard powder

2 tsp.

garlic powder

1 tsp.

onion powder

1½ cups

beef stock

½ cup

sake (Japanese rice wine) 

2 tbsp.

soy sauce

1 tbsp.

red miso paste

1 tbsp.

 

Worcestershire sauce

freshly ground pepper to taste

Method
  1. In a large bowl, combine the freshly ground beef, Steakhouse Onion Burger Seasoning, and grated garlic. Divide the meat into four portions. Using the Napoleon Gourmet Burger Press, form four delicious patties. Chill them for 25 minutes while you prep the grill and everything else.
  2. Preheat your grill to 350°F. Place a cast iron griddle directly on your cooking grids over direct heat or replace your cooking grids with the cast iron griddle. (The size of griddle you have depends on the size of your grill) Brush the griddle with your favorite high-heat oil like peanut, coconut, or avocado.
  3. While the grill is preheating, place a saucepan over low heat. You can do this on your side burner or on your stovetop. Melt the butter and whisk in the mustard, garlic, and onion powder. Whisk in the flour. In a measuring cup combine the stock, sake, and soy. About ¼ cup at a time, add the stock mixture until you have reached your perfect gravy consistency – smooth, coats the back of your spoon – then whisk in the miso paste, Worcestershire, and add pepper to taste. Keep warm.
  4. When the grill is hot, toss down 1 tbsp. of butter and add the onions to one end of the cast iron griddle, then place the burgers on the grill to cook over direct, low heat. At this temperature, the onions are going to fry more than caramelize. Start them sooner at a lower temperature if you want your onions caramelized.
  5. After about 7 or 8 minutes, flip the burgers, wait about 2 minutes and then drop the remaining tablespoon of butter. Spread it around and then fry your eggs until the white has set. About 3 minutes.
  6. Serve everything together. Lay down a bed of rice, place the burger patty on top, followed by the egg. Garnish with Hawaiian black salt and chives.

Loco Moco is crazy. You may be a little confused by the combination, but much like the potato in the Lamb Keema a few weeks back, it just works. Give yourself a flavor vacation to a tropical island and make yourself a Loco Moco for dinner.
