1 lb.
ground beef
1 lb.
ground pork
2 tbsp.
cold butter cut into small cubes
1 tsp.
mustard powder
1 tsp.
garlic powder
Salt and pepper to taste
Honey hickory barbecue sauce
Buns and favorite condiments/toppings
Deep Fried Onion Rings:
2 lbs. (2 large)
yellow onions, sliced 1/2 -inch thick
2 cups
flour + 1 cup for dusting
1½ cups
cornstarch
2 tsp.
garlic powder
1 tsp.
mustard powder (spicy optional)
1½ tsp.
salt + for seasoning
2½ tsp.
sugar
3 cups
IPA beer or carbonated drink (like sprite or ginger ale)
1 large
egg
5 cups
vegetable oil
- Prepare the onions by slicing them into half-inch thick rings. Toss them in 1 cup of flour and set aside for about 30 minutes, while you prepare your patties.
- Keep the meat as cold as possible while working with it. In a large bowl combine the beef, pork, butter, mustard, garlic, salt, and pepper. Thoroughly mix and then use the Napoleon Burger Press to form perfect 1/3-pound patties. Press an indent into the middle of each patty with your thumb. Chill them in the fridge for at least 30 minutes.
- While the meat and onions are chilling out, whisk the flour, cornstarch, garlic, mustard, and sugar. In another bowl whisk together the beer/soda and egg. Slowly whisk in the dry ingredients.
- Fire up the grill. Preheat the main burners furthest from your side burner to about 400°F (medium-high) leaving the closest to your side burner off. You will be grilling the meat over the main burners while cooking the onion rings using the side burner.
- Pour 5 cups of high temperature oil, like vegetable oil, into the Napoleon Stainless Steel Wok. Heat over medium-low using the side burner until the oil is approximately 350°F.
- Fry the rings in the oil for about 3 minutes or until golden brown, flipping once. You can do a batch or two before bringing out the burgers. Place the cooked rings onto the cooking grids over the unlit burners to drain and stay warm while you cook. Season with additional kosher salt.
- Grill the burgers over direct heat for 5 to 7 minutes, flipping once while you continue to fry the onions.
- To serve, build the burger up with your favorite toppings then add the patty and top with onion rings and a healthy heaping helping of barbecue sauce.
